This video is very special to me. I freaking love jiro though I've never been to Japan. He taught me that sushi is about balance. I used this and elaborated. Cooking in general is about balance. Because most people in USA don’t value tradition and craftsmanship like the Japanese. Not too many people here willing to spend $400 on a handmade professional chef knife.
Not only lack of tradition, but also because the US values people doing their own thing, or going their own way. The culture with young people is about finding the next newest thing, not about following what your family has done. Instead of being praised for being highly skilled and specialized, it would be called old-fashioned and stagnant.
Maybe I'm wrong but it seems to me when the master and chef kashiba were having their photo taken, chef kashiba tried to stoop so that he is not taller or higher than his master.
Yes. In Japan, when you bow to each other. You bow lower to a person of higher stature/a person who you greatly respect more than they bow to you. It can be for posing as well to show their relationship as mentor and student.
Love how they treat the items they sell. I ordered some scale model items from Japan and they were packaged with amazing care. They included a small piece of ornamental paper and a note thanking me for the purchase. I don't remember what I spent but I do remember the experience.
Shaku is the preferable size for professionals while Kyu-sun is a bigger one for home use. I have kyu0sun size and I think it's not big enough but I don't have enough spaces at home and I don't cut sashimi that often.

I seen one of their 25 dollar Damascus steel knives and it will make you want to fly to Japan or Germany or Anywhere they make knives. Glad we have eBay

I went to a prestigious fancy sushi place once. And unfortunately, IT WAS JUST SUSHI! Sashimi is 1 raw ingredient, I'll stick to my all you can eat buffet for $10.

That shop doesnt have an online shop. They do have a website but it doesnt even have a product cataloque. They also dont accept credit cards. They have been doing it for hundreds of years, they dont have to.
