When sushi chef Shiro Kashiba came to Seattle nearly 50 years ago, there was none of the classic Edomae-style sushi that he loved and learned to make in Japan. Opening the first sushi counter in Seattle at the legendary restaurant Maneki, he then went on to help grow the popularity of Edomae sushi in the Pacific Northwest.

PSA: Kashiba speaks perfect English. I work in the French restaurant literally underneath Sushi Kashiba and see him almost every day. Incredibly friendly and humble, runs a fantastic restaurant, treats his staff with respect and appreciation. I'll be fucking damned if anyone wants to talk shit.

It's funny because I was going to say the dead opposite. I speak Japanese, and during this interview, he's struggling to pull out Japanese words and occasionally just says the English word instead. Clearly more used to English than Japanese after 50 years. Old boy has lived in the States for too long 😂

This is epic! I just went to Seattle for a shoot and filmed at Shiro's for the best sushi experience of my life. The combination of fresh local Seattle area seafood and Japanese techniques makes for the perfect sushi experience and a transportation right to homeland of sushi itself... -Mike

By far, Sushi Kashiba has been the best dining experience of my life. Even had Shiro serve me one of the three times I've been there. I'd go weekly if I could. If you are ever visit Seattle, make this spot a priority. They do not do reservations in advance, only the day of.

Respect to master chef for not being wasteful. I noticed most fishermen In Western Countries Would only filet a fish and throw away the rest of the body. Not Good.

My husband and I went to Sushi Kashiba last year and did the Omakase. It was the most absolute freshest fish and most amazing sushi we ever had. So happy to see this video!

Having such a legendary sushi master, I can see why he has been so successful. He seems to have great passion, and love for what he does. I'm glad to have seen this video. Japanese cuisine, and sushi always intrigues. A lot of their food is so clean, and simple, yet so delicious.

I know there maybe comments in the same vein, but I had chills when he described being a pupil of Jiro-sensei, whom many regard as being currently the greatest sushi chef alive today, especially as he was the very first sushi chef to gain Three Michelin Stars, and has kept them ever since ... Another fun fact ... Jiro-sensei is still very much alive and well, and, at 93, is still hard at work in his restaurant ...

I have been here a couple times and Shiro is amazing. The chefs he works with like Suzuki san are also amazing. One of the best dining experiences I have had. It us definitely worth waiting in line for 3-4 hrs to get a seat at the bar.

For omakase you basically eat until your full. So it depends on your appetite for cost. I basically ate until i was kicked out. Its high grade sushi/sashimi so its not cheap but very worth. My understanding is you can’t reserve over the phone. You basically wait outside the resteraunt couple hours in advance and then get your name on list an hour before opening. If you want chef shiro-san to make sure to call advance to get his work schedule, he only works some days and only serves couple seatings.

I had the luxury to eat at Jiro's in Japan and Shiro's in Seattle. Although Shiro's was good, it is nothing even close to how amazing Jiro's is.

I've dined here a few times. Twice with Kashiba himself at the sushi bar. He has another sushi restaurant in Seattle called Shiro, also very good. Both highly recommended for special occasions!

The omakase here was a top 3 dining experience of my life. I promised myself whatever they put in front of me I would eat without exception. Candidly, the salmon roe texture and overwhelming flavor was pretty tough for me to get through; had never had it before. But I mean it was 2 hours of absolute bliss at that counter. I highly recommend getting there extremely early to get seats 1 and 2 at the far end of the counter as these are Shiro-san's seats. We were in 5 & 6 and more 'dead center' and while we could see things all around the kitchen, we were never personally served by the master. Needless to say it was still absolutely off the charts considering every chef there is world class.

I went to Sushi Kashiba yesterday and sat at the counter. We ordered omakase and it was a great experience. Probably the best sushi I ever had in Seattle.

I just realized that I went to this restaurant in 2014 by myself when I was walking around the Pike Market. I didn't know who Shiro San was and just wanted some sushi. I spent $120 on the Omakase if I wasn't mistaken. I met one of his students that day I think. It is crazy since that was the first Sushi place I have ever been in Seattle. I also went to Sushi Maneki, the one he used to work at a couple of times.

I ate at this restaurant long before watching this and that's the first time that's happened to me with this series. This is one of my favorites aside from film I've seen about Jiro and Chiba's sushi & sushi stands in Japan for the more traditional style anyway which is the best it's the simplest. This was still one of the best sushi meals I'd ever had but I had no idea about all of this information that's amazing. I knew Maneki was over 100 years old but never would I have thought. The chilled monkfish liver dish at Maneki is amazing. Free the ikura from the freezer at Uwajimaya! Yeah no though that local pickled herring nigiri is a brilliant idea. I live in the same neighborhood as this restaurant.
