The origins of this cocktail are shrouded in mystery. Nobody knows for sure who created it, some say it was Don Javier Delgado Corona owner of the beloved bar La Capilla in Jalisco. What we know for sure is that it is one of Mexico’s preferred drinks.
Bartender Evan Harrison is credited with introducing the United States to La Paloma. He wrote a pamphlet called “Popular Cocktails of the Rio Grande” which refers to the region of Texas known for mass Grapefruit production, so much so the fruit has been called “Pride of the Rio Grande”.
Whatever the history of this drink, I can attest that in the realm of long drinks (a style Mexico is well known for) it is a good one. In this video I have opted for my own build, making use of fresh grapefruit and soda water as opposed to Grapefruit soda. So grab your shaker and a Collins glass and give this one a whirl. You won’t be sorry you tried it!
Here are the specs:
1.5oz. (45ml) Tequila
.75oz. (20ml) Lime Juice
.5oz. (15ml) Simple Syrup
Top Grapefruit Juice
Top Soda Water
Lime Wheel Garnish

We are having citrus Morrocan tagine chicken tonight for dinner. I made a quick cinnamon simple syrup to echo the warm spices in the chicken rub, used half grapefruit and half orange juice, and used Kirkland Sparkling grapefruit-flavored water in place of the soda water. It. Is. Amazing. I made a whole pitcher-full.

Just had a party this weekend (Mexican Street Food Theme) and served Paloma's. As the Barfly stated, I learned using soda. I think the carbonation of the soda gives you a very summery feel to the drink. This is a great drink for a hot summer night.

My version is almost the same I do: 1 large cup of ice top off. 2 Oz. of Jose Cuervo Especial 2 Oz. of Grape Fruit 1/2 Oz. of Simple Syrup Squeeze half a lime a big size lime is preferable if they are small use the entire lime. And add sprite to taste. And enjoy.... Love this guy channel great stuff. Cheers.....🥃

@@MrStarnerd Exactly, that's garbage "mixto" tequila. Trust me, use Don nacho extra premium blanco tequila, 100% blue weber agave tequila from the highlands region in Jalisco Mexico.

I usually do 2 oz reposado tequila, 1.5 oz grapefruit, 0.5 lime, and 0.5 simple. Shake and strain into a Collins glass with fresh ice and top with soda. You can also add a pinch of sea salt if you want. This is by far my favorite Paloma spec.

If you're gonna do fresh juice I still recommend topping with grapefruit soda. The fresh juice does not have enough sweetness to carry the drink; while the soda is good it's just not the same.

I've had a lot of Paloma's. And as much as I usually prefer fresh juice, none of them are ever better than using Jarritos. There are two drinks where I don't use fresh juice. This, and a gimlet. They just aren't right any other way.

Yes! I don't get using fresh juice. It's a completely different drink at that point (and not as good). The grapefruit soda flavor, combined with the intense carbonation, is what makes a paloma so good. It's similar to green apple candy flavoring vs actual green apples. You could never replace one with the other.

Yeah, it needs to be more like 2 ounces instead of a "dash" of fresh white grapefruit juice, and substitute simple syrup with agave syrup. Cool channel, more tequila and mezcal cocktails, por favor.

I like 2 oz 1800 silver, 1.5 oz fresh grapefruit juice, and 1.5 oz house-made raw lime cordial (no pre-bottled shit). The zest flavor from the lime cordial as opposed to just lime juice and simple syrup gives it more depth of flavor, and also helps to maintain a consistent tartness between seasons as the taste of grapefruit varies considerably throughout the year.

I love using fresh grapefruit in my Palomas, but I much prefer to include a fixed measure in the shaker, because I find that sometimes the grapefruit juice does not mix well with the finished drink. Plus I don't like "top with" as a measure, because that will mean something different each time. Doing it with soda is fine, but since the grapefruit is what makes the drink special, I'd use a fixed measure.

I left out the syrup and used fevertree pink grapefruit soda (that has sugar) and added a bit of fresh squeezed grapefruit and a pinch of orange and some orange bitters (mint leaves per @how2drink) and it was smashing!!!!! Cheers!!!

Mix grapefruit, oranges, mandarin, lime and lemon juice. This will get you close to the Mexican fruit called Lima! Which is all of those citrus fruits in one. Bomb.

I have this really good grapefruit soda that I can use. Do you add the soda at the end to keep the drink carbonated? Is that the idea? Or can you just use plain grapefruit juice?

In response, I’ll post something from Jim Meehan. The bar industry is rife with bartenders waxing their mustaches and executing old recipes which may not be that great, but are kept in their original form just for the sake of being “authentic” if someone comes along and adds something to it that truly elevates the drink, I say go with that one. After all I’m not a historian I’m just trying to teach people how to make the best drinks possible.

@@marioelbros it's not hate of someone fashionable it's that the industry is rife with those who are more interested in appearing "authentic" than being truthful about what's good. It's about people who would rather follow traditional recipes (even if they're not the best ones) just to be authentic as opposed to using available technology and modern technique to elevate the drink. Personally I love a fashionable bartender!

Mastering the classics is crucial to beginners like me or else we will not have a proper starting point.

Specs look good on this cocktail. I just feel this is a “countryside peasant drink” and should be made with one of the Mexican grapefruit sodas you mentioned with a pinch of salt in the glass with a squeeze of lime.

This seems like a slightly over-complicated version of the drink. If you walk into a Tex Mex restaurant in Texas, they just put a shot of tequila in a salt-rimed highball over ice, squeeze in a lime, and top it with Jarritos.

And I'm sure their margaritas are just tequila with pre-mixed sweet&sour. If you go to any bar worth its salt (pun intended) you'll get a version like this, a version that focuses on giving people the best version as opposed to a mass produced mess. Think about it, Jarritos is ladened with sugar, which causes dehydration and most likely hangovers. Whereas this version calls for less sugar, given the fact that it uses fresh ingredients, and therefore you can rest assured that having a few of these isn't going to regret it the next day.

Elephants Fly I’m not going to debate that the drink above is a better drink. However, it’s not a very authentic recipe. The Paloma isn’t some fancy craft cocktail, it’s just tequila and grapefruit soda. You walk into a bar in Mexico or a Mexican joint in the southwest, this isn’t what they’re going to make you.

Elephants Fly You’re probably right about sour mix in Margaritas however, the gentleman isn’t wrong about Palomas. It really is just a highball with Tequila, a squeeze of lime, a pinch of salt, topped off with Squirt/Jarritos/etc. As far as the amount of sugar, 7g is coming from the simple syrup, 4g from the grapefruit juice - if you’re using Mexican squirt (which utilizes real sugar), you’re probably not gonna be that far off as far as sugar content goes. As a consumer, I actually prefer the squirt because of consistency. As a bartender, I’ve grown tired of the Paloma interpretations. The recipe in this video is a classic reinvention of an otherwise easy drink.

My favorite Tex-Mex bar in Houston place offers about 12 different margaritas, with different combinations of tequila and orange liquor brands with the fresh lime juice. They do know their stuff, and are serious about their bar. But they, like most everyone else, do their palomas with Squirt + tequila and a squeeze of lime. It's generally the same approach in Mexico, and I'd guess (outside of noncarbonated variations) 95%+ of the palomas consumed on the planet any given day use Jarritos or (maybe Diet) Squirt. And they are very good. Barfly's version is a very, very nice version of the Paloma, and you can definitely control the sweetness level down by administering the sugar and soda levels yourself. It's something you'd find, maybe, at a more craft-oriented bar. But Isaac's right about the legit version of this drink that you'll find in the wild. Similar example: A whiskey and cola is usually made with... whiskey and cola. @@tahnolikessharing In the US, yes, but a classic paloma is made with grapefruit soda. This Texas version is correct (although I would use Tajin instead of straight salt). Grapefruit juice makes it a completely different drink.

Use squirt soda and grapefruit juice that way you don't have to make simple syrup the grapefruit juice is going to be give the pinkish color to the drink

Use grapefruit SODA it's much better. I ordered this at a bar once and they only had juice not soda and it was nowhere near as good with juice. Also, you don't need simple syrup unless you want it extra sweet.

Diego Martinez Grapefruit juice is fairly bitter and lime is tart. I would say you definitely need simple. When you use the soda you probably don’t bc it’s already sweetened.

That's correct, you are wrong :) You wan't a good amount of ice to keep the cocktail cold. But this is also a preference thing, some prefer cocktails with less ice that dilute faster and get warm quicker.

I would recommend not shaking a Paloma..You need to follow the same rules as a Tom Collins...Your adding sparkling water/club soda so don't shake/dilute!! Do not use grapefruit soda or Fresca like this guy says either you need to have class and use Fevertree club soda/Pellegrino/Perrier to top this off and use Agave fresh squeezed lime and Grapefruit juice... I'm sorry but I have to absolutely disagree with this guys recipe!! Here's mine and you won't be disappointed.. 2 1/2 ounce blanco tequila 0.25 oz agave 1 1/2 oz fresh squeezed grapefruit juice 0.5 oz fresh squeezed lime juice Top off with fevertree club soda/San Pellegrino/Perrier. Grapefruit slice garnish.. Build in glass add ice than stir, than add sparkling water/club soda and stir again and you will thank me later...Don't forget the grapefruit garnish😉 This guys recipe is absolutely lazy and white trash??? Squirt/soda?? Really? You're definitely not a bartender, but your are a Barfly🤣 Anyway just make sure you use a fine strainer for the lime juice and grapefruit juice and my Paloma will be perfect👌
