How to Make Matcha Creme Brulee

(serves 4)
100ml Heavy Cream (3.4 fl oz)
80ml Milk (2.7 fl oz)
2 tbsp Granulated Sugar
½ tbsp Matcha, green tea powder
2 Egg Yolks
Sugar for torching
Ramekins: 7cm/2.8” diameter | 70ml/2.4 fl oz

生クリーム:100ml
牛乳:80ml
グラニュー糖:大2(26g)
抹茶:大½  
卵黄:2個
仕上げ用グラニュー糖:適量

Francis is the most relaxed dog I have ever seen. He sits right next to the hot stove and oven, doesn't beg for food, and the blowtorch didn't phase him at all.

I absolutely love creme brulee, my husband and I make it every year for our anniversary. :-) I'm so, so excited to try out this version of the recipe! I never would have thought to replace the vanilla beans with matcha!

I have found that mixing the matcha with the sugar first helps break up the lumps ahead of time as the powder clings to the sugar grains. I do this when making green tea milk and yogurt breakfast drink in the morning. Wonderful recipe!

Just made this. Doubled the recipe and it only made 3 ramekins. Left them in the oven for double the time and was still really runny! The flavour is so good though! 🍮🍧

In France to make crème brulée at home when you don't have a torch, just at the end of the baking, we put sugar on the crème and we use the grill to caramelise.

This recipe is really good guys i made it with a rice cooker and it still taste amazing just make sure you cover your container with aluminum foil before placing them in the rice cooker

Lassionbabe True that. I mean, Japanese TV series and animes show children cooking all the time on their own to show that's it's common practice among Japanese youngsters. Just like in Western TV shows where children heats up microwave food.

Japanese children through middle-high school take home economic as a required class. They are taught to be able to take care of themselves once they reach adulthood. Unlike here in America fast food restaurant exist for our needs....

Clifford vu Good for them, I mean Japanese teenagers. Yes, teenagers.. not childeren. Probably there was a misunderstanding. For me "child" means max 10 year old. 11 and more is a teenager. And I am not an American. And I learnt how to cook and home economics at home, from my parents.

***** You can use the broil setting on your oven. My sister makes creme brulee all the time but doesn't have a blow torch. Use a cooled down oven so that it doesn't overcook the custard and place the ramekins as close to the top of the oven as possible. It'll take about 5-10 min, depending on your oven, but just go by how burnt the sugar looks on top. Rotate the ramekins every couple minutes so it caramelizes the sugar evenly.

Torching the sugar while setting the ramekin on the surface is safe, but will not create an even layer/disk of hardened caramel (notice how one of the caramel is off to one side in the video, and another one is only browned in the center). To create an more beautiful, evenly browned layer of caramel, you have to pick up the ramekin and rotate it while you torch it so that the liquified sugar can move around and distribute evenly instead of sitting in 1 spot and burn. Just wear a glove if you're afraid of burning your hand.

Just curious, wouldn't it be better to temper the cream/green tea mixture with the eggs rather than dumping them in with the pot? I believe that is done with most custards because it's less risky for heating the eggs.

Wow, your green tea powder is so beautifully green! ^_^ Unlike the one I bought from Taiwan's organic tea shop when I went to Taiwan for travelling. It costed me $330 for one bag of green tea powder. The color isn't green as yours. When I make green tea's dessert they just don't look good cause it's not green after they bake, kinda turn like light chocolate :/

that was a very large blow torch. Dulce Delight here on youtube has a great technique for creme brulee that doesn't require a blow torch and can be safer for kids. it would work great for this recipe!

I remember eating a green tea crème brulée for the first time at Ippudo restaurant in New York, it was super super good! I want to eat it again and cook it by myself but I don't have a blowtorch :(

MsThevy Oh, I've just found another way to cook it without the blowtorch! So for all of you out there who don't have one... -Set your oven on Broil (high) and put your rack on the top shelf. -Let the oven get nice and hot (3-7 minutes). -Fill an oven safe dish with crushed ice and water and place your dishes into the ice/water bath. -The cold bath should keep the custard from cooking, but the sugar on top will heat till it caramelizes. -It'll only take 3-4mins.
