Matsutake Gohan is a very simple rice dish to enjoy the flavor of Matsutake mushrooms!
Matsutake is also called pine mushroom. It is usually found at the foot of pine tree, very expensive mushroom because of its rarity. Price varies depending on the area of production.
Recently, my mom said worm-eaten ones sold at discounted prices are really good and affordable, so I tried them out. Yes! They are truly great. They are worth to try!!!
BTW, I usually get Matsutake at Takashimaya (高島屋) department store in Futakotamagawa (二子玉川) ;)

Matsutake Gohan (Pine Mushroom Rice)
Difficulty: Super Easy
Time: 1hr
Number of servings: 4
Ingredients:
2 cups uncooked Japanese rice (short-grain rice)
100g (3.5oz.) Matsutake mushrooms
A
1 tsp. Sake
1 tsp. soy sauce
B
400ml water
10cm/4inch-square Kombu (kelp)
C
1 tbsp. Sake
2 tsp. Mirin (sweet Sake)
1 tsp. soy sauce
1/2 tsp. salt
Directions:
1. Wash rice and leave for about 30 minutes. If you are using pre-washed rice (musenmai) you don't have to wash it.
2. Clean each Kombu with moistened towel. Soak in 400ml water for 30 minutes.
3. Clean each Matsutake mushrooms with moistened towel if necessary, shave the hard part of the stems if necessary, slice and season with A.
4. Place the rice and C in a pot, add Kombu Dashi (2) to the appropriate level indicated in the pot. Then place the seasoned Matsutake (3) on top of the rice.
5. Place the pot into the rice cooker. Cover and press the button to start.
6. When it's done, toss the rice lightly using a rice paddle, then serve.
You can garnish with chopped Mitsuba (Japanese wild parsley) if you like.
I cooked the Matsutake in the rice cooker, but you can also grill it then mix in the cooked rice later. It is up to you~

Ochikeron - today while at a different grocery store than usual, I found lots of varieties of fresh mushrooms + truffles - including matsutake! It was $50 per lb, so I got one for about $11. (U.S. grown/found. So maybe cheaper?) Now, years after watching the videos, I am going to try both this rice and the matsutake clear soup.

I remember when I was a kid. My mom actually looked for worm/insect eaten veggies like eggplants or leafy veggies b/c it meant that less pesticides were used on it. It freaked me out before but now I can see the point.

Yum! I wish I had those types of mushrooms around my place. I figure I could just use a combination of some of the local variety of mushrooms instead of the pine tree ones. The nice thing about the Pacific northwest is there is not a shortage on mushroom variety.

I saw some Matsutake at asian grocery today, I will try this recipe. Do you mind telling us why we need to wait 30 minutes after washing the rice? Thank you for sharing this recipe!

Le Genou de Claire rice absorbs water when you wash, so you want to somewhat dry it out to let it absorb the dashi broth. 30min is enough in general :)

I'll definitely try this recipe with shimeji mushrooms as you suggested, I don't think they have matsutake at my local Japanese market. I hope you and your baby are both healthy and happy! How is your husband handling the pregnancy? Is he excited to be a father? :]

more "exotic" mushrooms are so expensive. Dried ones are even more expensive! It's madness! I've seen some varieties sold at over $100 USD per pound! I'm sure that mushroom rice was delicious tho T_T

This recipie looks delicious as usual but i was wondering: as i'm french and I don't have a japanese rice cooker, do you think it'll be okay to try this recipie cooking the rice and the ingredients in a iron pot like you showed us in one of your video? (how to cook rice) if so, any advice about the time of cooking it? Thanks a lot!

Would this recipe work well with enoki mushrooms? They don't really have a strong defined flavor.. but they're pretty cheap haha

I tried this (but with eringi) and it the rice didn't cook trough, even though it looked as if there was a bit of moisture left in the rice cooker. I had tho finish the dish in a pot on the stovetop. Will have to try again, and add more water I guess...

Wow, so expensive mushrooms..In Finland it's called "Männyntuoksuvalmuska" You can pick those for free, if you find them... If you stand mosquitoes and bad weather.

you could try to use dry sherry instead of sake,it still wouldnt taste the same though. And sooo sad but true: You really cannot replace anything for mirin..you kinda could if you had Sake though and a bit of honey. I know, sadly, sake is pretty darn expensive ,BUT if youre into japanese cooking and recipes, its like one of the most essential ingredients, so maybe you should invest that few more dollars/euros, whatever, to try it out!

Usually white wine can replace sake. And mirin is basically sweetened sake so maybe you could add sugar to white wine? Have you tried purchasing some online? Rakuten Global Market ships internationally I think.

Not sure about a substitute, but I buy cooking sake, which is a little cheaper than drinking sake, so maybe try that? :) Also, I agree with Lynn above - definitely try buying online! You can find some really good deals :) Good luck!

I heard some similar models sold overseas don't talk. Maybe the best thing is to get one in Japan, make sure at the store!? Or ask Panasonic online overseas :) They are happy to help you!

i think that is a regular sake!? if so, 1tbsp Mirin can be substituted with 1 tbsp Sake + 1tsp. sugar. not the same, though.

Is it okay to wash kombu kelp and mushroom instead of just wiping them with a damp cloth? Is there an advantage if we wipe these ingredients with a damp cloth instead of washing?

I decided to eat matsutake for the first time a week ago, found them at maruetsu for 1,000円 I was so happy until a sliced one in half and there they are… Lost my appetite instantly.Never buying it again ;_;
