You forget to mention the most important thing about MDF and HDF - don't ever get it wet, or it absorbs the water like a sponge and becomes a big soggy mess with no strength what-so-ever
With HDF the particles are smaller and the compression is greater to form a more contiguous and therefore better finish to prevent extra filling painting and sanding. MDF is cheep and strong enough to form the structure but does not machine as well.
