#1 Garlic-Ginger-Onion Seasoning Cubes
🧅🧄🧊
- Blend the onions, garlic, and ginger into a paste.
- Pour the mixture into ice cube trays.
- Freeze the trays.
- When cooking, pop out a cube and add it to hot oil in the pan.
#2 Veggie Pasta Pot
🥕🍆🍅
- Sauté a Garlic Ginger Onion cube in oil.
- Press the tofu to remove excess water, crumble it, and fry it until golden.
- Add spices of your choice (recommendation: oregano).
- Chop and add vegetables of your choice.
- Add the canned tomatoes and let it simmer. The longer it simmers, the better it tastes.
- Add a splash of balsamic vinegar if desired.
- Cook the pasta until slightly underdone and mix with the sauce.
- Store in jars, let cool, and refrigerate.
#3 Summer Potato Salad

- Boil the potatoes and slice them thinly.
- Grate the cucumber.
- Mix the (plant based) mayonnaise, yogurt, lemon/lime juice, fresh dill, and salt to make the dressing.
- Combine the potatoes and cucumber with the dressing.
#4 Energy Bites
🍌🥜 🍫
- Mash the bananas.
- Mix the mashed bananas with oats, peanut butter, protein powder, and sweetener.
- Form the mixture into small balls.
- Roll the balls in your choice of coating.
- Refrigerate for a while to firm up.

Remember, everything you see online can and should be adapted to fit your needs and preferences. What I share is my personal approach to meal prepping. I enjoy to prep plant based meals, that include as many veggies as possible (eat the rainbow). This way I make sure, I get a variety of in my system.
