Alright, it's not even Friday yet and Lidia is ready to party 🎉 🎉🎉 POP🍾🍾🍾oh yeah, I'm ready to leave work early 🥂 But overall, those meatless meatballs looks excellent and very appetizing! Zucchini, like cauliflower, is a real interesting vegetable that can be used to make anything!

Glad I had meatballs last night, make double batches and freeze, but gotta try meatless ones sometime they look good, but then again everything you cook looks good.

Lydia, I love your vegetarian recipes! I am a vegetarian and think this is the healthy way to eat. Far too much animal cruelty and too many inhumane factory farms. It is disgusting torture for animals. It breaks my heart.

Although Lidia didn't answer the question: Could you cook the meatball in the sauce? I haven't made these quinoa meatballs yet, but from my experience, any type of meatballs fall apart in sauces if the moisture hasn't been sealed by frying. I might try baking as this works for ground meat balls.

Can I cook the no meatballs un the sauce?

Doesn’t the addition of eggs make it no longer vegetarian?

I wish people would remember that cheese has rennet in it so it is a meat-based product so it does no good to make a meatless meatballs you're still putting meat based cheese in it. Not vegetarian eggs are not vegetarian either
