Melanzane alla Parmigiana - Killing the Myth of Chicken Parmigiana's Existence

I believe we are doing mankind a favour by killing the myth of "Chicken Parmigiana" being an actual Italian dish. Here are the ingredients for 6 people:
- 3 aubergines (eggplant)
- 500 gr of tomato sauce (1 garlic clove and 1 onion + 4 tbs olive oil)
- 100 gr of chopped up fresh basil
- 3 mozzarella cheese
- 150 gr of parmigiano reggiano

Sometimes people change recipes when they move somewhere. Chicken parmesan/parmigiana started with Italians in the North East of the USA. Usually, when people make a substitution it's because something wasn't available or was more expensive. Chicken Parmigiana is probably closer to pollo alla pizzaiola.

breadcrumbs and eggs is not ORIGINAL Italian recipe. Also without the breadcrumbs allows people with wheat allergy to enjoy this dish

What do u mean the dryer it is the crispier the fry will be. if its all wet they will be so mushy. I think she did a wonderful job i would try it first, then if u still feel the same way, well, move on, theres no need to be rude and say theres is no good just because its not yours it fine to have pride in your cooking,or to give constructive critisism but another to just be plain rude.

However i do wish it had a coating of breadcrumbs then the draining would really pay off but to each there own i still think they did a good job with there version.

Do either of you have your own cookbook out all over the world now or your own line of cookware, hmmm I think not, so I’d quit with the bad manners and pointless ideas, that take this away from being what it’s meant to be, a classic Italian dish, that my partner makes, exactly the same as this and it’s “ gorgeous “ Regards from eastbourne in the uk
