Traditional Potato Salad for the win. And is a southern table complete without deviled eggs? #memesrecipes #shineforjesus #potatosalad #deviledegg #boiledeggs #potatosaladrecipe Original film date: 3/8/21
Ma'am, I am the daughter if a farm girl from Kansas that goes back about 3 generations if not more. Mamma, taught me to boil the potatoes in their jacket with the eggs to save time and energy. Then to continue as you do, but according to our taste. Lately I gave found out that the little egg cookers (cost about $10.00) are the best things for cooking eggs! From soft scrambled to hard cooked they can't be beat. The hard cooked eggs are easy to peel and I have never had 1 fail to come out oerfect. Since I am 75 years old it is a great help to be able to make things easier. I have also found out that you can cook eggs for a "fried" egg sandwich and it will also steam hot dogs. Best $10.00 I ever spent. Thank you for allowing me to ramble.
Can you advise on the brand of egg cooker? Not familiar with this "gadget". Pushing the same age and haven't seen one before. :( Sounds like something I could use. :) Thank you!
Dang! You can steam hot dogs in there (Dash egg cooker)?! Using the poaching or omelet tray?! Mind blown 🤯. (I should have figured this out since I hack a super simple basic rice cooker for all kinds of recipes thanks to the late great Roger Ebert book, "The Pot and How to Use It.") Okay, now I want to try "grilling" bologna or Canadian bacon on the hot plate of the egg cooker...I have two (🤣) so I guess one will now be part of my food test lab on the patio with the fire extinguisher ready.
Truly, a classic Southern woman! I lost my Mom as a young woman and never felt confident in the kitchen. This gracious woman makes it all seem so easy. Thank you for posting simple versions of southern comfort food. Now to look for that pound cake video!
Wow, thank you!! That is one of my goals to encourage people to cook.... it doesn't have to be complicated to be good. And... Pound Cake recipe is by far the best ever. Believe me I have tried a plenty.
I also lost my mother at a young age, so I can understand some of the challenges you face growing up. Learning to cook was definitely one of them. That's what makes videos like these so wonderful, especially with precious ladies like Diane.
I think the thing I like best about Meme’s videos is that she’s teaching how to cook - not just how to follow a recipe. I love the videos where she shows her buffet of food at the end. What a joy it must be to have a meal with her in her home!
I lost my mom as well when young. I was 11. Mom had to work hard, dad had had a stroke at young age when I was about 2. I loved her cooking. And years after she died, people would still comment on her cooking. Wherever she worked, as a cook, the place had more business on days she worked, and slacked on her days off. I wanted her home with me all the time. I do remember things she made that I loved so much, but lost her before she could show me how to cook. So I would try to copy and cook it over time until one day , it tasted the way I remembered it. It is awful losing your mom when little, isn't it? My mom didn't have much, there were 6 of us and I remember bits of conversations of her mentioning Corning Ware or some other things that she thought were pretty but couldn't afford. To this day I will look around second hand stores and all the bowls of mine in my kitchen are vintage from the 60's, when I was growing up, but things that mom had from before I was born. I'm sitting in my air conditioned house feeling lazy and remembering lazy summer days when I was young. My mom didn't have AC on hot days when cooking. She was 49 when she died. Dad died little later at 51. I have it better, I guess, but I really needed my mom, especially with 4 kids and trying to learn how to cook.
A deviled egg trick I learned if you get too much mayo in your filling: sprinkle in some instant potato flakes. The potato flake will absorb the extra moisture and you can't taste it at all. Actually, I now intentionally use the potato flakes because the filling ends up so light and fluffy. I also like a little grated onion (very little!) and salad shrimp in my deviled eggs. Mom always sprinkles paprika on her eggs too.
You are so right about the Pound Cake. When I was growing up my Grandmother always made us a Pound Cake on Friday to have for the weekend. And she always made me one on Sunday afternoon to take back to college for the next week. I was never sure if I had so many friends on my dorm floor because of my personality, or because I always had pound cake.
Only difference with mine is I put a little bit of apple cider vinegar, and no relish. And I swear my grandma had that same dish! Gotta love southern food!
My Mom added the ACV too! She’s put about 2-3T in after draining the potatoes so they absorbed it. I could eat her potato salad every day for the rest of my days. Nothing compares. She also added a little ACV (along with a tiny pinch of sugar) to her Deviled Eggs mixture. If you haven’t tried that, you’d likely love that too. I always used her recipe & I was always the “designated Deviled Egg” bringer for every covered dish party at every work function I ever attended.
@@Catlady8 oh yes, ACV is most definitely in my deviled eggs! No relish either. I’m also the deviled egg bringer LOL. My family is from eastern NC and put vinegar in everything.
@@Nails-by-Jennifer I was born & raised in Atlanta (still here after 58 years) but my parents grew up in Alabama so I was born & raised on southern food. My Mom cooked 7 days a week. We had a meat & 3 every night of the week. What most had for Sunday dinner, we had all week long. As soon as I got in college I learned to call home for all the recipes. Of course I usually got “Well, I don’t really have a recipe. Just put it in until it looks right”😅😂
Again, so funny, but Mama used to say the same thing about peeling a potato! Her mother always said that a sharp knife like the one you are using takes less potato off than a potato peeler! And I agree! My grandparents were depression era folks who taught me to conserve as much as possible and it stuck! We can be modern, as you are, but not forget what we were taught! Thanks Diane.
Hi Diane . . . I just stumbled across your channel and I absolutely love it! You are such a delight, I would love to sit at your table. Thank you for taking the time to share your recipes. God Bless ❤
I have my grandmother's chopper like yours. She bought it in 1938 as a church fundraiser. It is perfect for chopping hard boiled eggs. I had a good laugh watching you chop eggs for your potato salad.
For the same reason, I call mine creamed eggs. It just doesn't sit right with me calling it deviled eggs. Or devil's food cake. I didn't think a thing of it when she said it though, because it's just what most people call it.
Me Me you are my favorite of all the other cooks, one cook is so proud of herself that sometimes I believe she will fly off to a better place. Love to watch you cook!!! MeMe you and the gentleman named Paul just love him also. Now ukulele know my favorite cooks.
I love the biscuit cutter for chopping eggs, lol. She makes everything look so easy. This is how my Mom made her tater salad as we called it, except she used about 3 times the mustard..
I’ll be sure to try your recipe. My tip for perfect hard boiled eggs is, --buy a hard boiled egg cooker $20. Mine cooks 7 eggs perfectly in about 8 minutes. The shells fall right off. You will love it 😊
It's amazing how awesome boiled eggs, mayo, and mustard taste together!! 🥰 Whether in potato salad, macaroni salad, deviled eggs, or egg salad sandwiches, they taste yummy mixed together!! 😍 We always add a touch of onion powder to our egg mixture. We aren't big onion or pepper fans, but a touch of onion flavor with the mustard really enhances the taste, especially once they all get acquainted!! 😋
I love MeMe so much! She reminds me of my grandmother whom I called MamMam. She’s so sweet & I enjoy her recipes a lot! I’ve got to get the cookbook 💕👍😋
That potato salad looks so delicious. It reminds me of how my mom used to make it. The only difference is she would boil whole russet potatoes with the skins and everything then she would let them cool and peel them. She also used six eggs like you did with about the same amount of potatoes. She would use best foods mayonnaise, and instead of dill she would put smoked paprika on top or just regular paprika. One additional item that she added was 2 teaspoons of sugar to the potato salad. Looks sooo good. I just told my significant other last night that I wish we had some potato salad so now you have me wanting to make some and I have red potatoes on hand. 😊
Using lettuce as a bed for the eggs is so clever! I don't have any little kids to cook for anymore, but I know when I was a little girl I would have thought that was just magical.😀
Your family is so lucky to have you cooking all this wonderful food . But I just wanted to thank you for sharing and you do such a fantastic job explaining everything in such detail ……..I can’t wait to make yours cube steaks !!!
Devil eggs are a favorite among all the males in my family. I have tried different ways to cook eggs over the years and also how to serve them. I have finally arrived at the point where I started collecting egg platters. Funny thing is I thought egg platters were a strange idea but it must be a southern thing. I’m always looking for a good potato salad recipe. I have been enjoying watching your videos recently and your great tips.
I always cook an extra egg for egg salad just in case too. If I don’t use all the whites, I can pile the yolk mixture extra high in the remaining eggs. Yum! I always top them with a dash of paprika.😉
I envy your generation that mastered the art of the paring knife to peel with. I consider myself a seasoned cook however, for the life of me I cannot peel effectively w/o a peeler. I don’t even think my parents owned a peeler😅 My Dad was the master of peeling the citrus for the Christmas Ambrosia with a knife and he could peel & section a huge bag perfectly in no time flat.
This lady knows how to cook. One thing, at the 7:05 mark, "you'll have mashed potato salad, and you don't want that." Some folks in Louisiana might argue that point. I've tried it, and I like it.
@@Betharoot I have my potato salad out of cream potatoes before and a lot of times I use it was left over cream potatoes and turn it into potato salad. The first time I did it, the kids change my mind I make cream potatoes and they said we want and potato salad today so I just added all the ingredients and they loved it and they like it warm
I remember my granny and aunts always having a pound cake to serve someone. You are most definitely a Southern lady who would have this tradition. Makes my heart happy. I love watching your videos and hearing your lovely Southern accent. 🌿🌺🌿🌺🌿
I found you on RU-vid today! Love, Love Love! I'm hooked! I'm in Monroe, NC and we have the same knives and the same chopper. 😂 I think the little white one came from Walmart or the dollar store, and the long silver handled knife came from a fundraiser at church, and the chopper is so old, I don't even remember, but it has outlived all the others I've had. Keep up the wonderful cooking Ms Diane!
Your kids and grandkids are sure blessed to have a Mama and Grandma who is a good cook ! They never go hungry! My Mom didnt like to cook and so we went out to eat often. Its not the same as home cooked meals. ❤if i was in your family, Id be at your house all the time!
Hello there MeMe. It is always so good to see you. I could eat potato salad and deviled eggs every single day. It so delicious. Thank you so very much for everything you do on your channel. May God shower you with many blessings. Enjoy your day and take care
That looks so yummy! I love your cookbook. I have used it often! I'm so glad I purchased one and encourage others to get one too. It would make a great gift!
This is almost identical to my potato salad. I just like the potato chunks to be a bit bigger & I don't add relish. I mix the dill into it and top it with a sprinkle of paprika. Chopped eggs are a must!
My potato salad is almost identical I use sweet relish, mom chopped sweet gerkins and used some of the juice and some celery seed, salt, and pepper. Mom sliced eggs on tops sprinked with paprika. We're from the Midwest.
I use only dill pickle relish chopped onion a chopped egg 1-2 to mix all together I take 1-2 tbls white vinegar add as much DUKES mayo as needed depends on amt you are making add yellow mustard whip when it looks nice and yellow pour in and stir well. definitely with you no pickle in deviled eggs.
Oh dear MeMe, two of my favorite things ever…potato salad and deviled eggs. Watching your make these two things reminds me of my mom cooking in the kitchen. Such happy memories!❤
Looks like a delicious classic potato Salad. I start with these ingredients and add pimiento, sometimes I'll add some ranch dressing or sour cream and sometimes I'll use chopped green pepper instead of celery. Also, at times I'll use the small red potatoes and leave the skin on, then of course I always sprinkle paprika over the top before serving.
Meme I love this recipe! I’m getting a lot of ideas from you for my Thanksgiving dinner….I’m so glad that I came across your channel! I told my husband that you were my “RU-vid grandmother”😂 Love you & God Bless❤️🙏🏾
I put a little apple cider vinegar or red wine vinegar and a pinch of sugar in my deviled eggs. Then I put capers on top which we love. Thanks for the video. 🥚🥚🥚🥔🥔🥔
This is exactly how I have always done my deviled eggs except that I top them off with a slice of pimento olive, or black olive. So pretty and tasty. Love MeMe's videos.
I really enjoy your videos and just listening to you…you’re so pleasant. And your meals are so simple to prepare! I put about a tbsp. and a half of salt in the water to boil eggs and never have a problem peeling them. Thx for sharing!
Love the potato salad done just about this way although we like to use a whole onion and a bit more celery. Also, we make it 1 to 2 days ahead because the onions will flavor the potatoes and ingredients more pronounced plus those added onions and celery give it a nice crunch when served very COLD. Love the deviled eggs "grass" idea for the serving dish. Always a favorite treat when served very COLD as well. Sometimes its nice with home cooked crisp bacon bits or green chives on top !
I absolutely love your recipe. The only thing different I do is boil my potatoes whole and with the skin on. I peel them after they are cool. The potatoes are much creamier and do not hold so much water after boiling. Some paprika on top is always a nice little Finishing Touch.
I like big chunks of sweet yellow onion and bread n butter pickles in my tater salad. And to put them fine looking deviled eggs over the top stick a small piece of crispy bacon coming out of the yolk mixture.... great looking dishes!
Looks delicious. I like half dill and half sweet pickle relish in my potato salad, and a little sweet relish in my devilled eggs. Thank you for sharing your family recipes.
My mom taught me to cook my potatoes with the peel on, let them cool, take the peel off and cut. Time consuming. But in recent years I’ve used the instant pot method and won’t go back. You cook the eggs and potatoes in the same pot for six minutes. I don’t follow the recipe though because I still love my southern style potato salad with dill pickles. Never has a store bought potato salad come close.😊
