My eyes welled with tears to hear that the Queen hoped the second coming would be in her lifetime so she could lay her crown at the feet of Jesus. That’s a powerful statement and shows she loved the Lord.
I'm watching this video long after her Majesty, Queen Elizabeth, passed, but her remark about laying her crown at the feet of Jesus makes me admire her that much more. Hers was a life well lived in service to her country and her Savior. Thank you for sharing this and all your wonderful recipes and for the way you shine for Jesus!
I so miss Queen Elizabeth. Sometimes when I hear “the Queen wore” (or whatever), I immediately think “but she’s gone”. It isn’t out of meanness, my mind will just only think of her as Queen. She was the only Queen I ever knew, she was an extraordinary human being. There will never be the likes of her again. I miss her.
As an Englishman i can tell you that's a fantastic Victoria sponge. Queen Victoria was actually quite a large lady in later life - i guess this may explain why!

I grew up in the South back in the day when only the daddy’s had cars so all the women stayed home and got together and swapped recipes and us kids would play outside all day. Your recipes take me back to that time and I remember learning how to cook with my mom. It sure does bring back great memories! I agree! Life was so precious back in the day. It pains me to see children with their eyes glued to their phones. We were always outside playing, riding bikes, playing with those big boxes that stoves, refrigerators, washers etc., came in. We actually used our imagination! I feel sorry for the children of today. I was taught to weigh the eggs in their shells, and use the same weight for the butter, sugar and flour. I also add vanilla essence, and line the base of the tins with grease proof paper. The tins should ideally be straight sided. More often than not a Victoria Sandwich is just spread with jam. The flour should also be folded in in roughly three parts.

Hello there Ms MeMe. I love that you honored the Queen. Sponge cakes are the usual type of texture one would get in wedding cakes. I learned that from Baking&Pastry school. The reason is that it's firm enough to hold up on stacked tiers, heavy ingredients, and takes well to different flavors and syrups. It's quite delicious! Love that cake you made. Aloha from Hawaii🤙

Aww how lovely of you to do this for our QE2 passing. Victoria cake is my absolute favourite cake. You can change the filling from fresh whipped cream to butter cream icing (my preference not sure of the American term but its icing sugar with butter not cream cream) and use jam (raspberry for me) and we usually hace this on a sunday afternoon. The sponge cake really needs to be light. Btw it goes well with either a cup of unsweetened tea (breakfast tea with milk! No sugar) or cold glass of prosecco or sparkling wine. Yum 😋 btw your own jam was lovely, looked yummy.

Warn your viewers not to open the oven in cooking - you will get sinking. When you grease the pans, you can sprinkle a little flour on to help with it not sticking - Knock out any excess. In UK we fill it with strawberry jam on one side and buttercream on the other, then sandwich together. Lots of love…adore you and your cooking.💕💕
This cake was one my my late husband's and also our son's favorites. Yours somewhat resembles what we call Koningskroon, translated from Dutch to Kings Crown cake. I always thought of the crown of thorns on Jesus' head during the crucifixion making this cake. It is made with a rich sponge cake, often cut into 4 layers; each layer soaked with rum just for the taste, (the alcohol evaporates), then topped as you did with each layer spread with strawberry preserves, sprinkled again with rum, put together and topped with powdered sugar as you did. There is no whipped cream in the middle on this one, but that looked yummy, particularly if a whipped cream stabilizer powder was added to keep the whipped cream stiff. It is sliced very thinly due to how rich it is as you also said. I really appreciate your channel, your cooking, your stories, your faith and the admonition to shine for Jesus. With my only child receiving a terminal diagnosis and me getting a recent breast cancer diagnosis, a person can get down while believing for healing from the Lord, but you always cheer me up. My son has a wife and children. Prayers of faith for healing are appreciated, and I pray for you and yours as well. Blessings.

Ms. MeMe, I am of both English and Scottish Heritage. When HRHQE2, said what she did about laying her crown at Jesus' feet, I wept. I was always so very interested In The Royal Family. Recently I had a test done to find out where my ancestors came from. Now, I know why. Her Royal Highness is truly a remarkable lady.

Actually it can be either, or any combo of these, so don't worry! The original Victoria sandwich was just two layers of sponge with jam between (either strawberry or raspberry) and the sponge was very heavy as they had no baking powder back then so you had to beat the eggwhites to get air into it Nowadays cream is preferred if it's going to be served immediately. Buttercream is used if you want it to keep for a couple of days.
I love the Watkins vanilla. My mother always sent it to me. They make a clear vanilla if you need a really white batter or icing like for a wedding cake. I love Watkins coarse ground black pepper also.
