There are two versions of memil guksu:
one made with katsuobushi and another made with smoked anchovy.
Make a large batch of jangguk, and it'll help you get through the summer!

Memil jangguk (Buckwheat soup) (Dried skipjack ver.)
[Ingredients]
3 (50g) large-eyed herrings
15 (35g before preparing) anchovies for infusing soup
5&1/2 cups (1L) water
1/4 (62g) onion
1 stalk (100g) green onion
80g of radish
15 pieces (30g) dried kelp
2 cups (360ml) dark soy sauce
1 (140g) brown sugar
1/2 cup (90g) cooking wine
1 cup (6g) dried skipjack
[Directions]
1. Remove the guts in anchovies and large-eyed herrings for infusing soup.
2. Prepare the onion, green onion, and radish for the broth.
3. Put water, large-eyed herrings, anchovies, onion, radish, green onion,
dark soy sauce, brown sugar, cooking wine, and dried kelp pieces in a pot
and bring to a boil.
4. Once the broth boils, reduce to medium heat and continue simmering
for at least 30 minutes.
(When the broth boils down to half, taste it and turn off the heat.)
5. Turn off the heat and add katsuobushi for flavor.
6. Drain the broth using a strainer.
(600ml of broth after completion)

Memil jangguk (Buckwheat soup) (Smoked anchovy ver.)
[Ingredients]
20 (60g before preparing) smoked anchovies
5&1/2 cups (1L) water
1/4 (62g) onion
1 stalk (100g) green onion
80g of radish
15 pieces (30g) dried kelp
2 cups (360ml) dark soy sauce
1 (140g) brown sugar
1/2 cup (90g) cooking wine
[Directions]

Memil guksu (Cold buckwheat noodles)
[Ingredients]
100g of memil (buckwheat) noodles
80g of radish (before grating)
Scallion
Wasabi
(Jangguk dilution ratio)
Broth 1 : Purified water 2
[Directions]
1. Cook the memil noodles in boiling water and rinse in cold water.
2. Dilute the drained broth with purified water at a ratio of 1:2.
(Adjust the seasoning to taste.)
3. Cut the radish into a decent size, add some water, and grind finely
in a blender. Remove excess water using a strainer.
4. Finely chop the scallion.
5. Mix the radish, scallion, and wasabi in the jangguk.
6. Place the noodles on a plate with ice underneath it,
and serve with the jangguk.
