I have a couple of questions: 1- During the 3 days I have to wait for it to be ready, do I need to keep the pickle in the refrigerator or on room temp? And after it´s ready? Room temp or Fridge? 2- Why should I only eat only 1 spoon per day? Great recipe as always! Thanks again!

When taking food as medicine - in this case methi seeds by itself, which is concentrated in this pickled version, limited is what works to get its benefits. Methi is heat-producing in the body. It helps joint and other pains .

Nishaji, says the during the three days of waiting for the methi to soak in the lemon juice and get fluffed up, it can be left covered on the counter. After three days, if the pickle is consumed within 15-20 days, then refrigeration is not needed. For longer shelf-life, say 6 months, she says adding vinegar will help preserve it without spoilage. Again no refrigeration is needed. Best to bottle it in a clean jar with a tight lid. Must use clean spoon each time to serve yourself and clean hands to handle the pickle so no contamination is possible.

I tried making this aachar at home for the first time & it came out yummy :) Jus luv it....I added lil bit of sugar to make it khatta mitha... Post pregnancy, I was tired of eating Methi capsules, so now I will this delicious Aachar!
