Mexican Street Corn Recipe

One of my favorite things to make as a quick meal addition or something to take with you is this adaptation on Mexican street corn from The Food Lab.
Corn - Mexican Street Corn Salad
INGREDIENTS
4 ears of corn, shucked and kernels removed (about 3 cups of kernels)
2 ounces cojita cheese, finely crumbled
1/2 cup finely sliced green onion
1/2 cup fresh cilantro leaves, finely chopped
1 jalapeño pepper, seeded and finely chopped
1 tablespoon lime juice (from 1 lime)
2 tablespoons vegetable oil
Kosher salt
2 tablespoons mayonnaise
1 or 2 medium gloves garlic, minced or grated on a microplane
Chili powder or red pepper flakes
DIRECTIONS
Heat the oil in a skillet over high heat until shimmering. Add the corn kernels, season to taste with salt, toss once or twice and cook without stirring, until charred on the first side, about 2 minutes. Toss the corn, stir, and repeat until charred on the second side, about 2 more minutes. Continue tossing and charring until the corn is well charred all over, about 10 minutes total. Transfer to a large bowl.
Add the mayonnaise, cheese, scallions, cilantro, jalapeño, garlic, lime juice, and chili powder to taste and toss to combine. Taste, and adjust seasoning with sale and more chili powder if desired.

the production value on this is nuts...what the heck?! Looks better than a tv cooking show...we need more of these, Marshall!

I made it for dinner tonight as a side dish and my son loved it. I'm trying to learn as many recipes as I can with vegetables. My son can't stand veggies but this he enjoyed.

Excited to find this recipe and video. Had as appetizer at a local restaurant and couldn't wait to learn how to make it. Great instructions. The volume of greens are a bit misleading. I just did it to taste. Cutting the corn was super easy with sharp chefs knife. Might cut back on mayo next time I make it. Yep, lime gives it great taste. Hot or cold, tastes great.

Looks good. But if you fry the corn (which is not even needed as this can just be a cold salad), why not throw the garlic in the pan aswell? Do you just prefer raw garlic?

Hey Marshall and viewers! I have a few suggestions; For the corn cutting, try using a bundt cake pan. I use this method because of a couple of close calls. Example: imgur.com/DXYdfw1 As for the garlic press, get ahold of this one: www.pamperedchef.com/shop/Cook%27s+Tools/Herb+%26+Garlic/Garlic+Press/2576 I'm not sure how I got along without it before. You don't even need to peel the garlic! Thanks for the video Marshall, I'll definitely be trying this out!
