OMG!! this was so good. My 10 yr old is so picky and she loved it. The jalapenos and juice taste so good in the salad and not spicy. I have tried at least 4 of your recipes and they are delicious!! thank you for sharing.

Claudia, Thank you so much for all your cooking videos. I made your version of Chili Relleno's and they were so delicious. I couldn't believe that I made those. They looked so beautiful and they were yummy. I have been watching some of your older videos. You are such an inspiration and a real hard worker. You always have a pleasant and upbeat personality... I don't know how you do it. You are so patient and such a loving mother. Your children are so amazing. You do all that and still went to school. I know how hard that is. On top of everything you work. I applaud you for going after your dreams. You deserve it.
I made thiis recipe yesterday. The only things I did differently was that I omitted the potatoes and I ended up using chipotle peppers in sdobo sauce instead of the jalapenos and the jalapeno juice. The next time I make this, I'm thinking about using cooked cauliflower florets in place of the potatoes just to see how it turns out. This recipe made a large batch that I have plenty of the mixture left over. When I eat this, I intentional left the lettuce out of the mixture so that when I have future meals I can portion enough of the misture and laid it on top of some iceburg lettuce salad mic and it turnd out so good. Thanks for the recipe.

This is my new favorite chicken salad, i made this right after watching your video. I never thought of adding all the vegi's, i didn't have peas and i added a couple of boiled eggs because i had them, delicious. My wife and i had this chicken salad with tostada's, the perfect dinner after a hot and humid day working in the yard.
My cousin is half Mexican & I’ve never ate this until she made some & brought it to work. She served it with tostados & omg it was so bomb & the tapatio was the cherry on top ☺️

I do this but with shredded chicken, shredded carrots, celery pieces, shredded lettuce, mayo salt and pepper jalapeños on the side with tostadas and it comes out delicious! But can’t wait to try your recipe! 💕
I make it the same but I like it with tostadas and tapatio. One of favorite quick meals... if I want to go extra quick I use the can of mixed veggies. Taste just as good. Thanks claudia.
