This beautiful marmalade has a delicious unique flavor from the sweeter less acidic Meyer lemon.
2 lb. Meyer lemons, divided
2 regular lemons
6 cups water, divided
5 cups sugar
1⁄4 cup fresh lemon juice (about 2 lemons)
Ladle hot marmalade into hot half pint jelly jars leaving 1/4” headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
Process for 10 minutes in boiling water or steam canner, adjusting for altitude as follows:
1,001-3,000 ft ~ increase processing time by 5 minutes
3,001-6,000 ft ~ increase processing time by 10 minutes
6,001-8,000 ft ~ increase processing time by 15 minutes
8,001-10,000 ft ~ increase processing time by 20 minutes
Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

Born and raised in Northern California! My grandma had Meyer lemon trees. They are my favorite! We’d eat them like oranges they were so good! Now I live in frozen Wyoming, and we don’t grow anything here- it’s too cold! I miss my lemon trees!!!!

I started growing Meyer lemons in containers last year and still have a few in the fridge. Meyer lemons are absolutely my favorite lemons and addictive. NOW Carol, try a mixed marmalade with them and Persian limes, grapefruit, oranges, grapes, cherries... endless possibilities!

Looks yummy. I would be trying this one right now, if I were home in my own kitchen. Maybe I will get there before the season is over. For now, I have family out of state who needs my attention. You are one of the only people who uses the Victorio steam canner. My sister and I both have one. Have you ever tried using Tatler or Harvest Guard lids in that canner? I love the canner, but I am kind of going crazy trying to get my Harvest Guard lids to seal properly in it. It does a great job on button top lids.

The information given at o8"20 is interesting. With boiling water open to atmospheric pressure the temperature remains constant irrespective of the heat applied . With a steam pressure cooker it always has a Valve which regulates the pressure and so the boiling occurs at higher temperature set by the pressure valve and hence the saturated vapour pressure is constant and does not depend on the rate at which heat is applied. One need to make sure that the safety valve is operating as otherwise what I described could fail and becomes very dangerous. But then this is engineering thermodynamics and not cooking................... though I would stongly debate the fact that cooking marmalade is thermodynamic and chemical engineering playing about with the structural engineering of the used ingredients,

I’m more confused. Is this a two day process? Why? No much visual explanation on to use the canner ( how to set them up). Did you sterilize the jars? How much do you pour in each jar?
