I think it would be cool if there was some more in depth footage of how all the ingredients were made, like breaking down how meyhem’s pesto and crab was prepared or how nicole’s lox rolls were rolled up. the pacing feels a bit rushed!

Been saying this since season one. I think the show would be so much better if they extended it from 10-15 minutes to 30-35 minutes. Hot Ones is 30-35 minutes per episode, so i don't see why this can't be too. People would watch i'm sure.

I used to go to a pizza restaurant as a teen that had Shrimp pizza. Had it and that became my favorite type. Never ordered anything else after that. I think most restaurants dont make it is because you dont want to overcook it. It becomes rubbery so you have to watch it carefully. But with a white sauce it was the best.

I''m not throwing shade here. My question is genuine, and I'm prepared to learn. When I was trained to make pizza, the cardinal crust sin was having the center of the pizza be squashed flat by too many toppings and/or underbaked. I've watched several of these episodes now, and the few times the camera shows the slices towards the center of the pie, it looks a lot like that gooey, underbaked crust I was taught indicated a problem with the bake. Sure, the bottom is crusty and even charred, and that's crazy delicious. But what about turning the oven down and making sure the crust is cooked all the way through? What am I missing?

I guess it really depends on the style of pizza you‘re making. Neapolitan pizza for instance tends to have a pretty wet center so you can‘t eat it by using the « New York fold » technique but that‘s just the way it‘s supposed to be. On the other hand neapolitan pizza is generally pretty minimalistic and shouldn‘t have that many toppings that would make it even wetter. I think that the judges are probably a bit more lenient since they wan‘t to see creative pizzas with interesting toppings, even if that means that the doneness of the dough is sacrificed a little. And in most cases you can‘t really do a low and slow bake without sacrificing the nice puffy crust, which also seems to be pretty important in this competition :)
