Water CAN exist in the Nether, but it must be placed using commands or mods. In Bedrock Edition, it appears red due to the water shading having a color for the Nether.

@NotAppropriate It changes after they looked away from it. Otherwise, they wouldn't have been able to get any wood or ores, use campfires, crafting tables, furnaces, doors... you get the idea.
