You can use canola oil if you have it in your country? I do not recommend using extra virgin Olive Oil for this recipe. This recipe needs a light and flavorless oil such as canola or sunflower oil. Olive oil has a deep flavor and heavy structure which is not suited for this recipe. I have never heard of light olive oil :) We do not have such product in Greece and I've never used it. Most households In Greece either use extra virgin Olive oil or a different type of oil for cooking or pies. Good luck and if you have more questions don't hesitate to ask 🥰🌹
