His chocolate sauce is geradelli can get it white caramel or chocolate. 49.00 bottle but it goes a long ways n you coukd thin ut out a bit or mix with a thinner ganache n still get a beauty flavor. This story is beautiful ❤

I have a question for any of the State Fair donut machine owners here that sell at events (or anywhere). When you order the cases of donuts, do you put them in a freezer? OR, do you not have room in your freezer and just keep them sitting out until you are able to get them to an event before the donuts go stale? If you DO have a freezer, is it big enough to hold up to 4 cases?

Several years ago I purchased an automatic do-nut fryer. When I first purchased the machine I used it on several times. The clean-up of the machine is excessively time consuming and hazardous should you not allow the oil to cool. That do-nut fryer is now making a great room decoration.

However, my big concern is having room to put them in a freezer. They said the donuts only have a shelf life of 7 days and the clock begins ticking from the day they put it in the truck to ship out. From what I understand, it takes about 3 days for them to ship the donuts to a customer. That leaves about 4 days for us to sell the donuts (even less if it takes more than 3 days to receive the donuts). That will be cutting it close for people to get the donuts and secure a location at a fair (or wherever) to sell the donuts. I don't know how people are able do this business on a consistent basis without a big freezer to store all the donuts. Are you selling the donuts at events? Do you think people who try to sell these donuts at events would need a freezer to hold the donuts until the time comes for the event (I assume a BIG one to hold at least 4 cases)? Or am I overstating the need for a freezer?

Bob never stated a BRAND of chocolate doughnut coating, I however think He's Referring to a STYLE of Icing called a GANACHE it can be Thick enough to spread with a knife or runny enough to squirt out of a bottle or put in a bowl to DIP the doughnuts into it. Ganache kinda creates a "CRYSTALLY", crispy, Fudgy shell as it dries, but while it is still wet it can then be dipped into other bowls of toppings that are small or CRUMBLY or Dry...... Think sprinkles. MINI chocolate chips, BOTH white or dark, chopped peanuts, pecans, walnuts, almonds, coconut, mini peanut butter or butterscotch chips, crushed Oreos, Crushed Butterfinger or Heath bars....... I could go on... Recipes for Ganache are all over YT and many of them ARE Doughnut coatings just play around with the ratios to get a consistency for dipping or squeeze bottles.

I forgot... its getting to be that time of year. Dip your Doughnut into chocolate Ganache and while it is still wet dip it into a bowl of crushed peppermint candy canes. Chopped dried cranberries and orange zest go great with chocolate as well.

Your the best Ben.🤗 I wanted to know how do these donuts hold up when making in advance for people to pick up, drop off or deliver. I was concerned about taste and freshness.

I've tested some and they do really well. Better to not top with anything so customers can warm up if they want. Otherwise, if they forgo heating up, then top them. Think of a frosted cake donut in a grocery store display case. Still good and many don't re-heat as it would melt off chocolate frosting.

Great info guys. what size generator would you suggest to be able to power that unit if you are at a location where you don't have access to power?

Is the State Fair Mini Donut Oven NSF certified? When you do events where do you keep the mini donuts in a cooler or do you take a portable freezer, where do you keep them prior to make them at events? In case I don’t take my trailer ?

@@Quickdraw1111 Hey there, so this was 3 years ago that I had that notion but that fizzled out quite some time ago. That being said, I honestly wouldn't invest in a donut endeavor unless, your heart is 1000% passionate about it. One main reason for me is I can't see a profit being made unless you're producing on a 10-15 employee production line and even if that was popular enough, you wouldn't have the need to attend pop up markets.

@@Quickdraw1111 And I think Lemonade would be a better option for you or something else sweet but you have to look at your overhead and figure out what will bring people in to your biz. The sugar biz is good tho. Lots of diabetic people running around consuming refined sweets not knowing their blood is turning into molasses.😁

@@broccolihart1 Okay, thanks for the reply. It is something I have to think about more. If I decide to sell donuts, I may end up going with the Lil Orbits semi-automatic machine (sells for $3000 ... double the price of the State Fair machine). It may costs more and be more trouble cleaning up the oil & the machine, as well as the trouble of making the donuts, but at least I won't need to get a freezer ... as I would with the State Fair donuts. This would be because obviously the Lil Orbits donuts are made on the spot. Also, the profit margin per donut is higher than State Fair.

I'm in ohio, I was told ALL EQUIPMENT HAS TO BE NSF CERTIFIED. does that sound right? I wanted to get one of these mini donut ovens but its not nsf certified. I'm building my own consession stand from an old pop up camper.

According to the State Fair donut website, there machines ARE nsf certified. This is from their FAQ page: "" The oven is NSF and UL approved."

They wont let us ship out of state from here in Nebraska. Under the Forager law.

I'd call state and clarify. Food is shipped out of Nebraska currently, so find out what may be required to do so. Also see what types of food can be shipped from home. Kettle corn?

Your time is a bit off. It wasn't "1 hour" in which he sold the 2500 donuts. Instead, it was an 1 hour & 35 minutes. I know it's not a gigantic difference, but it is still a difference. That comes to about 2.6 bags per minute, or something like that. ("bags" = a dozen donuts per bag, in this calculation)

ok so on $5.00 he makes $2.50 thats a 50% food cost? or ami wrong? not including other expenses that will work you out of business real fast or am i wrong? Ben I've been a big supporter for years but this business does not seem profitable enough to sustain it's self

I agree, but I dont think his prices were where they should be. If people were lining up like that and selling 600 donuts in an hour, his prices are too low. Also, any other COG should be sourced better online. I do like that it take less time to set up and tear down...time is money.@@BensCarts

To lower that food cost you can offer other menu items with a way lower food cost and average them out to a lower cost. So coffee at 15% and water and lemonade at 10% …
