Thank you, this is outrageous! A true folly! I guess the sponge is a variation of the Victoria Sandwich which for me in Aus is a butter cake of the most exquisite kind. The sponge could be the wonderful Irish butter cake with lots of eggs and butter everywhere, with minimal filling except for this great monster cake. My Aus sponge is egg whites and sugar to meringue, gentle fold of beaten yolks, fold in of flour and feather light with whipped cream and passion fruit topping eaten after making.
