Maybe ground beef with onions browned, then drained and add a cup of sauerkraut to the ground beef mixture along with a bit of garlic powder to your taste, with salt & pepper. This filling is delicious and would work for the half-sized or full-sized hand pies. Yummy!

I think I’d use a pie crust & a 4” biscuit cutter to make a higher qty to freeze them and bring them out just when you want them (dessert, perfect for a picnic, a romantic tête-à-tête served with some white wine in front of the fireplace), or for everyone who wants a different flavor. Hi Zeus!! Woods-I typed the above when you were making the apple ones. Pillsbury also makes frozen pizza crust that you can roll out & use.

I love that you are using the white square bowl for an herb holder ? I have lots of these and never thought to use it for this .

Have you tried using something other than pie crust or biscuit dough? I'm thinking perhaps puff pastry , tortilla wraps, egg roll wraps or multi grain bread instead. Do you think that would work?

Absolutely - any crust would work! I have used pizza crust as well.
