Mini Pavlovas with Pomegranates
Ingredients
Makes 6 servings
Meringue
5 egg whites at room temperature
pinch of salt
250g sugar
2 tsp white vinegar
20g potato starch
Topping
400 ml whipping cream (35% fat), chilled
40g powdered sugar
pomegranate seeds
1) Preheat the Oven to 300˚F (150˚C). Draw four 3 - 1/2 inches inch (9 cm) diameter circles on the parchment paper.
2) Beat the egg whites with the salt on high speed 1 minute until soft peaks form. Gradually add sugar and beat for 10 minutes on high speed, or until stiff peaks form. Sprinkle the potato starch and the vinegar on top and fold in to combine.
3) Place the meringue into a piping bag with a decorative tip and pipe beautiful nests.
4) Place the baking sheets in the oven and bake for 35 - 40 minutes. Turn the oven off and leave them in for another 2 hours, then take out of the oven to cool.
5) Pour cold whipping cream in a mixing bowl. Add powdered sugar and continue to mix until stiff peaks form.
6) Assembly. Pipe frosting onto the Pavlova and sprinkle with pomegranate seeds.
