Mini Pineapple Upside Down Cakes Recipe

In my opinion everything is cuter when it’s miniature. Every year my hubby requests a pineapple upside down cake for his birthday, but this year he wanted to change it up a bit and have mini cakes instead. Here is how I made them.
⬇️⬇️⬇️ RECIPE BELOW ⬇️⬇️⬇️
👩🏻‍🍳 MINI PINEAPPLE UPSIDE DOWN CAKES
1 box (15.25 oz) yellow cake mix
1 cup pineapple juice
½ cup oil
3 eggs
1 can (20 oz) pineapple slices
10 Maraschino cherries
4 tablespoons melted butter
10 tablespoons brown sugar
Bake at 325F or 165C for 30 minutes or until toothpick inserted in center comes out clean.

I've been wanting to make individual pineapple upside down cakes and have all the ingredients on hand. I have pineapple slices and tidbits bc I wasn't sure if the slices would fit in my regular muffin tins. I'm glad I came across your recipe. I like your presentation.

I love pineapple upside down cake. It's my favorite cake. I love these mini cakes, too. I think I would put the butter and brown sugar in the cakes without the pineapple. I love this idea, I am going to make these next time we have guests Trying to decide whether to serve with cream, ice cream, or custard, though and based on your trying to cut pineapple with falk to eat For my guests I think I will cut each ring through into bite sizes and reassemble in cups before cooking, thanks for sharing and you have a voice so soft you remind me of my first teacher at school, kindest lady I ever new

This is the first of your videos that I have seen and I'm so very glad I watched. You are a very good instructor and have such a pleasent sound in your voice. I have made pineapple upside down cake many times (it is our pastor's favorite, along with peach upside down cake 😊). I like the idea of the miniature cakes, especially for on the go snacks! Also if you add a can of coconut milk with that pineapple juice according to recipe measurements it becomes a pina colada upsidedown pineapple cake yummy

@@CookingwithShirani I did it one time but I made it a coconut pineapple tres leche cake so technically a pina colada tres leches because with the pineapple and the cherries still on top I used extra coconut milk to soak it in, it was pretty good I made it a little too sweet though I had used box pineapple upside down cake mix when I should have tried making it from scratch so I could control the sugar since I'm adding a can of creamy coconut milk and using the pineapple juice instead of water but it was still delicious lol I even sprinkled toasted coconut on the top

I freeze my extra leftover pineapple to use for other recipes. Never had a problem. I dont eat pineapple myself as im diabetic😢. However, i do like to have a little of what make, a spoonful or a small slice. Also, you should talk about your Amazon store at least nention it now and then. People want to know.😊

You can, but it won't be the same. It won't caramelize on top.

Chop up cherries for the last two. Cup them into jumbo muffin cups to be easily picked up.

I made this a while back and it was delicious. I was thinking just for fun to try using crushed pineapple, so it is easier to eat. So you are not sawing through the pineapple slice with your fork and crushing your cake.

I always substitute the oil with unsweetened apple sauce, It will measure the same, less calories, and its better for you, you will not notice the difference

You are so welcome 😊. To freeze them, I individually wrap each one in plastic wrap, then put it in a zipper bag, then freeze them. When you are ready to eat one, just take it out of the freezer and let it thaw out on the counter. So if I want it in the evening I'll take it out in the morning 😁

My only question is why just plain cupcakes? Why not just thin slice some peeled, cored apple or pear? Both are also delicious with the butter and brown sugar, especially with a sprinkle of cinnamon with the apple.

How do you store? Length of days to store can you freeze?

I individually wrap each one in plastic wrap and put in a ziploc bag and freeze it. It stays fresh for 3 months, but mine never last that long lol.

Hello, i have had the Problem of not enough Pineapple. Just Cut the Pineapple Slices into smaller Pieces and form a Circle as best as possible. Or just get a Smaller Can for the Extra 2 Muffins
