Unboxing the Misen 8 inch carbon steel fry pan. Season and first use. I am not affiliated with Misen and paid full price. I think if you take into consideration the cost of the silicone handle and the pan, it's not a bad deal. Now that I've purchased from them I'm receiving 20% off emails. I do feel the sides of the pan are quite low though for cooking anything that might spatter oil however. Seems solid. Large cooking surface for an 8" pan. Cooking a few eggs in the Misen carbon steel fry pan for the first time. Sharing :)

The instructions read "repeat steps 4-7 three more times" with regards to seasoning, for a total of 4 times in the oven with oil, not 4-7 times as stated in the video.

Ha! You are right! Before I bought this pan I watched a video: ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-Pn0qwt0sLTU.html And @3:17 he says they say to pre-season 4-7 times! That must have stuck in my head. Now I see it says repeat steps 4-7! Well, what's done is done D'Ohhh!!!

Thank you, I seasoned mine this morning and didn’t realize the handle was stainless steel. Oh well, time to get scrubbing! 😆

Overall couldn't get the pan to season with Avocado oil, and had a bad time with the product. It was probably due to my own misunderstanding, but the product was backed with the 100% satisfaction guarantee, so I went ahead with the original purchase with that peace of mind. Only to find out, they make service VERY complicated. I would not trust their warranty or service.

It's been a while now, but they did send me a new pan because of the warping. Still, I don't much care for it. Sides just aren't high enough and the second was also bowed in the middle. Not as bad though.

I spent an hour looking for you. I thought I put you in my cooking folder and you weren’t there. I think RU-vid is messing up. You made the video simple & I was waiting for mine to come. It’s here and I just found u after an hour. They switched to the top burner but suggested I might want to use the oven. I found you

@@xetaprime Laughing. No the instructions are the same. I’m using the oven like you do in your video. They emailed me and there switching to the stove top. I forgot what I said but they told me the guy on RU-vid is ok. I was worried about my pan warping because the electric burner doesn’t heat the pan evenly but I was referring to my 12.5” SS pan and my 13” non stick. Two of the coils don’t touch those pans and I think it’s my stove & the size of the pans are big. But the 10.5” carbon steel pan seems fine but on the electric burner but I’ve not cooked yet. I’m seasoning in the oven like you. I watched to many videos and I’m sticking with you....LOL. I will let you know how it goes. So far so good.

I have a hunch you simply used a bit too much oil during seasoning, so the top layer wasn't properly polymerized and bonded to the pan, and then when you cooked the first egg it came off.

I have a gas stove. I just scrubbed the coating off, blued it on the flame, oiled, and into the oven, but only twice.

All the other videos I've seen, the pan starts to discolor pretty quickly during the seasoning process, however I noticed yours did not which makes me think the pan didn't get hot enough to get properly seasoned and that's why it was sticking at first, I would get an oven thermometer and check to make sure your oven is not only getting up to the correct temperature but is also maintaining the correct temperature.

I think I prefer the potato peel, oil and salt method the French use. The Asian wok version tends to use green onion and ginger and no salt. Basically you are seasoning by cooking. It won’t look gorgeous, like 7 coats in the oven does, but then the one done seven times in the oven isn’t going to look perfect long unless you hang on the wall and don’t use it. My most nicely seasoned pans are always the ones that get cooked in the most. I have basically begun seasoning BY just cooking.

I'm wondering if the Organic Valley Ghee is filtered. The lecithin in the butter is what helps stuff from sticking. What's the red thing that you are using to clean your pan?

Didn't preheat enough. The oil needs to be smoking in order to be non stick.

@@xetaprime I thought you saw light where the handle meets the pan. You didn’t know how anyone could clean it so I thought pipe cleaners. But after looking at my pan there’s no gap or space. Forget I mentioned it.

@@xetaprime Hahahaha! I knew it would be. How's the Misen handle like? I'm curious about the width because I'm eyeing a sauteuse pan from a different brand that has a wide and flat handle and I'm curious if the silicone handle could be used on that pan as well.

@@AngelusBrady It measures 1-1/8" wide and about 6-1/4" from the bend to the tip of the handle.

seasoning is crazy esp without a gas oven. 5 hrs at 475...that's like $20 in electricity. why dont they season it at the factory??

After playing with carbon steel for a while my favorite pan is the large BelleVie I just started using with no seasoning. I don't use it all the time, steaks and hamburgers but the seasoning is coming along nicely. Don't think I'll ever do the hours in the oven again, with carbon steel.

I have three different pans now. BellVie, Matfer Bourgeat and Misen. I want to like the Misen but even the second one I have is slightly warped upward, it doesn't quite fit the small or large burner and the sides are low, allowing splatter. I really like the BelleVie pans. I have the 8-5/8", 10-3/4" and the 12--1/2". Solid pans but the 8-5/8" Matfer Bourgeat beats the BelleVie because it has no obtrusive rivets.

I’m thinking the gap between the handle and the pan as well as the two widely spaced rivets should help keep the handle cooler. I have seen similar designs that did stay cooler. It might be overkill with this Misen since it also has the silicone grip. That silicone grip is very likely to be lost or destroyed eventually, but even without it, that pan should still have a cooler handle than other similar pans.

Seasoning the pan is not as important people make it out to be. If you washed it thoroughly and removed much of the seasoning you need to season it once, that's enough. The idea is to get a very thin coat of oil polymerized on the surface. After that the best way to improve the non-stickiness is to just use it. There's no need to season the crap out of it. Don't wash it with soap, rather when your done cooking just deglaze it with a cup of water to remove the rough stuff, wipe it dry and you are good to go. If you're not gonna use it for a while then dry it extra on the stove top, at which point you can season it while you have it on heat with a very thin layer of oil before you store it away. To get your eggs to slide leave them for a bit before shaking the pan. Also, you need to develop a sense for how hot you want the pan before dropping in the egg. Hope that helps.

@Derd Horvat, good advice! It’s basically what I do. Sometimes after cooking in it, if no food residue, I just wipe the pan out, leaving a light coat of oil. No sticking in My CS pans and woks. I just don’t use them enough as I have a lot of cast iron too.

Mostly it's to let people know that the eggs don't stick and so you can just flip the egg by tossing the pan instead of using an extra spatula.

@@abhishes It's carbon steel not nonstick. Seasoning a pan to achieve a nonstick performance isn't an instant thing. And of course it's not dishwasher friendly. It's carbon steel. Putting it into a dishwasher and not drying it properly will cause it to rust. Why would you buy a pan that you have no idea how to use?

@@abhishes They sell three different lines. Stainless steel, nonstick aluminum, and carbon steel. Ads are different for each one.
