The secret ingredient are lemon seeds! Lemon seeds are a natural thickening agent to use in place of pectin! Using the lemon seeds make this a no-waste recipe. especially great for fruit close to it's overripe stage.

Ingredients
• 2 Cups Cleaned Mixed Berries
○ Strawberries
○ Blueberries
○ Blackberries
○ Raspberries
• 2 Whole Fresh Lemons Juiced
• 1/4 Cup Balsamic Vinegar
• 2 Tablespoons White Sugar
• 1 Tablespoon Brown Sugar
• 1 Fresh Orange Zest
• 1 Fresh Lemon Zest
• 1 Teaspoon Vanilla Extract
• 8-10 Ounces Spring Water
Tools Needed
• 1 Heavy Sauce Pot
• 1 Mesh Tea Diffuser
• 1 16 Ounce Covered Jar
• Silicone Spatula
Steps
Juice lemons & aside
Take all seeds & place into the tea diffuser
Place berries in a jar or bowl; pour lemon juice over & allow to sit 1/2 hour up to 1 day
Pour berries into pot, adding all ingredients
Place diffuser in pot, ensuring the seeds are submerged
Simmer on low & cover
Stir frequently to avoid sticking
Once the desired thickness is reached, remove the seed diffuser
**Note: Berries will continue to thicken as it cools
Transfer into jar, allow to cool before covering
Refrigerate & enjoy up to 2-3 weeks
