Hey Wyatt. I thought I'd let you know if you didn't already but the USB connection on the back of mixer is so that you can use it as an audio interface. I believe its a 2 input 2 output connection so you can send the mains directly out the USB to whatever streaming computer you're using without have to connect an interface inbetween.
It's been said before me but, the USB on the mixer is to use it as an interface. You could have that connected at same time as other interfaces and simply change the io in audio settings of logic... But you still need to swap over your mic lines as you said. I use a software routing program that basically solved this for me... Its called Loopback. You could essentially just use the normal set up always without physically changing mic lines and interfaces and use the routing software to send audio (fully mixed if you wanted in DAW) of to twitch directly. It also is good for sending to zoom calls from your computer sound etc or sharing any sort of audio across apps without needed to physically patch or change gear setup. Hope this helps!

Hey Wyatt stav your equipment is so cool dude it does pretty much looks like a complete drum recording studio bro totally cool my advice for you is to terry your best and stay focus when you use these equipment sometimes the sound changes in drums setting tho unlike most recordings studios these equipment can record drum takes in every of your cover songs that’s pretty sick cool my karaoke machine does the same as well but the sounds has echo to it on my karaoke singing machine tho it was awesome but I enjoyed that very much Wyatt great set up bro even tho is set up right great job man you definitely nailed this baby great job that’s definitely awesome your on fire bro love you 😍
Btw, Seismic Audio makes an XLR splitter that seems like it would suit what you're wanting. It looks like the snake you just unboxed but with two sends. So you can have your interface AND mixer fully plugged in all the time without having to unplug everything from the interface and plug it into the mixer. The process you describe in the video at 6:26 sounds very tedious and annoying.
