Made this cake this morning but used avocado oil instead of the soybean oil you used and used a scant 1/3 cup brown sugar and a small can of crushed pineapple. Plenty sweet for me!
Thank you for this recipe. The size is perfect for two people now that the kids are on their own but I can double this and use two pans and layer it for our Sunday dinners. That is a win/win.
Super recipe, really easy and soooo yummy. Baked the cake yesterday using sunflower oil and walnuts. Perhaps I might add some sultanas next time. Thank you for the recipe.

Am I hearing that all too familiar, as well as annoying, smoke detector low battery beep? No problem, I was just making sure it wasn't my two that had gotten louder. 😂😂 I'm making this, I always use my grandma's recipe that was handed down to my mom but it makes a big 2 layers and I want something a little smaller. I can eat Carrot cake year-round. ❤
