3 large whole eggs
1 cup [240 ml] vegetable oil
1 cup [200 grams] brown sugar
1/2 tsp salt
1 tsp cinnamon powder
2 tsp baking powder
2 cups [256 grams] all purpose flour
2 cups [250 grams] shredded carrots
*Optional Add-ons
1/2 cup [60 grams] walnuts
1/2 cup [80 grams] chocolate chips

Thank you very much for your recipe, the cake is incredibly delicious, also very easy to make. I added raisins instead of chocolate chips and I also made two additions, which in my opinion, lifted your recipe even higher! I added orange zest to the batter and I also added vanilla extract to the frosting (I also added a bit more sugar to it).

Yes, I think I will leave out the chocolate. I love chocolate, but love carrot cake without it. I’m curious how it would be with it, but it’s hard to make carrot cake more delicious.

I bet you could replace the sugars with Stevia sugars and have a no sugar recipe. And the cake itself doesn't necessarily have to have more sweet frosting on top.

This cake is absolutely delicious. Thank you very much Yeast Mode and God bless you a lot. Now belongs this recipe to the collection of my favorites and always successful baking adventures. I made the cake with raisins in place of chocolate chips because I don't like the combination between carrots and chocolate. I find that the taste of chocolate is too strong and this makes difficult to enjoy the taste of the carrots and the other ingredients. I used also less oil, sugar and salt in order to get a healthier cake.

i tried this just now.. i used almonds instead of walnuts so my 2 year old can eat it :) and skipped na choco chips as i do not want it to be so sweet and it turned out really good.. thanks for the recipe..BTW, i used turbo since i do not have oven :)

Need clarification. example you said 1 cup brown sugar or 200 grams. when i measured 200 grams it was 1.5 cups.. even the other ingredients such as oil , cream cheese u mention 1 cup but in grams in totally different. Can you please explain correctly. Planning to try

hi, I'm following a US standard measurement which is 240ml per cup. a baking cup measurement may differ from every country. But mostly, standards cups used are labeled with 240ml(like in US & other countries), 250ml for some countries like Australia) & 200 ml (for country like Japan). And this is why I provide gram conversion due to different cup standrads. So it's probably my cup is different to yours, but for accuracy you may follow the gram unit. :)
