This Zucchini Bread is easy to make and it has the perfect blend of spices, tender crumb and amazing flavor. No mixer required!

I use 9x4-inch / 22x11cm loaf pan
Ingredients:
190g (1 ½ cup) all-purpose flour
½ tsp baking soda
½ tsp baking powder
⅓ tsp salt
½ tsp cinnamon
1 egg
100g (½ cup) vegetable oil
120g (⅔ cup) light brown sugar
200g (1 ½ cup) grated zucchini
65g (½ cup) chopped walnuts + 20g for topping
1. Combine the dry ingredients in a medium bowl. Set aside.
2. In a separate bowl whisk sugar, egg and oil. Mix in grated zucchini.
3. Add the dry ingredients into the liquid mixture and mix until just combined. Don't overmix. Fold in nuts.
4. Pour the batter into a prepared baking pan.
5. Sprinkle with walnuts.
6. Bake in preheated to 340F / 170C for 55-65 minutes until toothpick inserted in the center comes out clean.
7. Let it cool at least for 1 hour before slicing.
