I don't know if Dutch is supposed to realize that Molly is eavesdropping, but as soon as Molly replies to Arthur, it seemed that his reaction was like: "Yep, she's there, and I'm just going keep reading my book."
People say that Dutch went crazy on Hoseas death, Dutch saying "now I have to care about feelings" makes me think something happened before the events of Red Dead 2
I honestly think that Dutch was always a bit crazy and it just got worse through all the years of running and killing and seeing the people he considered as friends and fellow soldiers that were fighting for his ideals dying all around him. It's not just Hosea's death, but everything else as well.

It came after the Blackwater massacre. Since then it has only been failures upon failures. No wonder it affects Dutch. Hosea’s death and the massive failure of Saint Denis robbery broke him a lot. I think he slowly starts to think that he’s not doing his job properly, and keeps focusing on trying to. You see that later we get into the game, there more doubting is coming up from the members. It’s clearly shown in chapter 6 when everyone left Dutch. John and Arthur ironically stayed though, but Micah has probably told him lies about them being rats due to their over all kindness.
Imagine having a private conversation and when it ends you notice one person spying , who then looks at another and goes "hey there" , Dutch heads on a swivel now
Real talk Molly should have at least helped Pearson prepare supper or maybe she could have knitted with Mary Beth Karen and Tilly or perhaps help that Kieran kid with grooming the horses but nooo... that pocket mirror is more important. Dutch done got her fucked up from the charm haha
Wasn’t how she was raised sounds like she was born privileged but bored and thought she found excitement with Dutch. Kind of sad how things ended for her.
