Lou strung together a bunch of little moments from life lately, and I feel like it captures the end of summer magic that is happening right now in Upstate NY. This wall tent means so much to me, and even though the summer turned out differently than we expected, I am so grateful for every moment we spend up there as a family. It's up there surrounded by trees and the people and creatures I love that I feel most like myself... I hope you enjoyed this glimpse into our off-grid life, and we can't wait to share more of the homesteading journey with you soon.
Thank you for all your love and support these past few months as our family has grown. It means the world to us both!

Dutch oven cooking is so fun! You put the pot right down into the coal, and put coals on the lid as well. You can even bake!

The lid is designed to hold hot coals to make the pot into a little oven. Heat up the pot more slowly, once its becomes hot, it stays hot and you don't need so much fuel to cook with.

There is a Netflix series about this guy's that work with timber and it's fascinating to watch and now Lou is extracting wood and is really cool to watch him! It takes a lot of knowledge to do it properly and he is really great. It's that kind of knowledge that can be taken for granted but this is a really hard job. It shows all his efforts to make it happen for your family ❤️

A great little fire starter I make for our wood stove is “wax dipped pine cones”. I save all the odds & ends of candle wax through the year. Melt it in a double boiler and dip the pine cones in. Are you guys planning on staying in the tent through winter? How’s the snow load up there?

I noticed the clothes line nearly touches the ground even after Lou tightened it, there are "clothes line support and separators" that roll along and hold the top and bottom lines together so they aren't weighed down so far. I've been following you since the Ody build when I was working on my own van build (her name is Bessie Lou,) and I'm so excited to see your next project or adventure as a family of four!

For a family starting from nothing, I think your summer home is the cutest idea and enjoy your photography of the area very much. It is rewarding and refreshing to watch each new idea take shape. Hopefully you can winter there and come up with solutions for the walls and ceiling to do that. If nothing else gather heavy canvas, quilts, or blankets for a second layer inside, or heavy denim material. It is a nice design and economical for a new beginning. Keep up the good work and the furniture is beautiful inside. Simple but loving craftsmanship and very creative.

Lovely video! I bet the sound of the rain on the tent is quite soothing. Max's core strength must be out of this world! He was kicking those casts around like they were nothing. Freya's eyes were so bright when she was search training. Yall are a beautiful family. 🥰

Only tips I would recommend about the cast iron is to make sure that its "hot" (whatever temp you desire), and dry before you add anything other than oil to protect the seasoning and then to season the pot after you cook in it. This doesn't have to be extraneous. After you cook in it. Clean it out, return it to heat till dry. This is the bare minimum to make sure it doesn't loose that black coating. Most then add a thin layer of oil and heat it again to reinforce the existing seasoning. Cast Iron can seem like a lot but in time they become a friend of the kitchen.

I grew up with washing lines and we used these double roller things that held the lines together and kept the bottom line with the clothes raised from the ground. You'd put one at the halfway point of the laundry as you're putting it on the line. I just did a search and they are called clothesline spacers. You could use one or two. Also, when cooking over open fire, one would usually let the fire burn down and cook over the coals. That cast iron pot is perfect for baking, as you put it on the coals and put more coals on the lid. The lip around the lid is designed to hold the hot coals in place. Lou should try baking his bread iin it. There is a Dutch RU-vidr refurbishing an old stone house in the Italian Alps (and living in a tent right now) who does just that. His name is Martijn Doolaard.

A tip on the cast iron pot - you need to have 2 separate pits. One pit with a fire going, and another with coals. You’ll interchange the coals with the lit fire to keep them heated! In South Africa we call it a “potjie” 🇿🇦

How did you find your homestead property in Hawaii and now in your current location? What made you all choose the tent? Where the permits hard to get? So cool to see fraya learning so quickly. If you are interested in teaching your dog to search for people you can set out a trail and have them follow footsteps. If you look up IPO training tracking it think you’ll find more information. I followed the program with my GSD dog and his obedience is astonishing and he really enjoyed doing it.

We get wind storms here where I live so when I see wall tents I think about how they'll hold up to 40-60 mph winds and guests up to 75, but hopefully that doesn't happen where you are. I love storms but I'm not sure how I'd fair even in a sturdy wall tent.

For starch, bulk bought couscous, classic or from spelt or even lentils add it instantly ( soaks up some cooking liquid and immediately . I love throwing in red lentils in any stew for protein, as they cook so quickly. Larder always holds some jars with cooked chickpeas and beans for some humus or proteins to add last minute. You are doing great, amazing Max with his cast and his sturdy parents.

If you ever train Freya for self defence, I’m sure you know this, but only use made up fantasy words for commands like attack, corner, bite, let go etc. You don’t ever want to put yourself in bad situations with strangers or even friends or family who don’t understand how serious a trained K9 can take some of these commands. We had two German shepherds growing up and it’s amazing what they can do ❤️

you can put the corn with the the husk still on right in the fire...it cooks quickly and is crunchy & delicious. same with potatoes...wrap in foil and toss in the coals they are delicious.

Since you are living off grid are you considering cloth diapers? I did it and hung them out in the 70’s ? I’m old. Yes Pampers were available but living on a budget like I did then it was so much cheaper . Not sure what you are doing for a washing machine though.

I find cooking with cast on an open fire is more of a measure with your heart type situation as opposed to a hard science, I find I’m constantly adjusting it if I add more wood to the fire, and that increases the heat, I lift the pot higher as it cools down. I lower it down. You just kind of keep checking in with it, and Seeing how it goes, cast takes a really long time to heat up but once it gets hot, it maintains its temperature for a long time so I tend to start it really low and then once it gets really hot, a raise it up higher.

Keep in mind that pioneers using cast iron cookware over a fire weren't typically vegans. The cookware requires fat. Use coconut oil or some other vegetable fat and brown the veg before adding broth or water. Don't use iron cookware without properly seasoning it first and putting fat in it first when using thereafter. You're lucky you don't have burn bans in Summer.

You guys look super cute in your tent and in your element. A word of caution though my sister had a cast on when she was a baby because her hip was out of socket when she was born and now, after moving several times and changing doctors over the course of life, her shins compared to her thighs grew a little wonky; so her knees look really crooked and she walks like a duck with her feet out more than normal. I don't think you will have that problem, but it's just a thing I know from my sister and baby casts, and I hope that won't be the same for Max! Much love from NH.

I very much assume that they are following the advice of medical experts with their son, so something that happened to your sister (many years ago...) is probably not very relevant for their situation. I am sure their doctors explained any risks and they are well aware and chose the best possible choice. Comments like this can cause anxiety, and are actually pretty unfair and unkind given that it is already probably a stressful situation for them. :(

I think more knowledge is more power and they have years and years to make sure his legs and his foot are growing properly. And they will. It was said with love, not malice.

I know it seems harmless and lots of dogs do it but please do some research on dogs chewing sticks. It's just not good. Rocks too which can start them to have pica.
