Almond pudding
500 ml of almond drink
3 tablespoons of potato flour
3 tablespoons of agave syrup (I used erythritol)
Soy pudding
250 ml of soy drink
1.5 tablespoons of potato flour
1.5 tablespoons of agave syrup (I used erythritol)
4 tablespoons of chia seeds
1 vanilla pod (I used powdered vanilla)
Currant jam
300g frozen blackcurrants
1 tablespoon of agave syrup (I used compote cherries instead of jam)
Decoration
2 tablespoons of almonds
150 g blueberries
(I used canned blackberries)
HOW TO MAKE IT
Almond pudding
Mix the almond drink, flour, and agave syrup thoroughly in a pot. Heat everything over low heat, stirring constantly to avoid lumps. When the liquid starts to boil and becomes creamy, remove it from the heat.
Soy pudding
We prepare the pudding in the same way as almond pudding. Additionally, while cooking, add chia seeds and seeds extracted from a vanilla pod.
Currant jam
Heat the frozen currants over low heat together with the agave syrup. Reduce until everything thickens.
Serving idea
Pour a layer of almond pudding, currant jam, soy pudding with chia, and again almond pudding into the cups. Decorate the top with blueberries and almond flakes
