Coffee & Fluffy Yogurt Pancakes For Breakfast to Brighten Up A Rainy Morning  

Rainy morning doesn't have to be bad. Especially if you make coffee and delicious pancakes. The recipe for Fluffy Yogurt Pancakes can be found below.

FLUFFY YOGURT PANCAKES RECIPE
INGREDIENTS:
- 2 eggs
- 3 tablespoons of brown sugar (I used erythritol)
- 1 cup of yogurt (I used lactose-free yogurt)
- 1 1/2 cups of flour
- 2 spoons of baking powder
- 1 cup of blueberries (I used two tablespoons of blueberries in syrup)
- 2 tablespoons of cashew nuts (I used 2 tablespoons of ground almonds)
HOW TO MAKE FLUFFY YOGURT PANCAKES:
1. Mix the eggs with sugar until a uniform mass is obtained.
2. Add yogurt and flour with baking powder.
3. Mix the mass with blueberries and finely chopped cashew nuts.
4. Heat the oil in a pan (I use coconut oil). Add the dough with a spoon and fry on both sides for about 2 minutes.
5. Serve the pancakes with fresh fruit, sprinkled with powdered sugar (I used fresh blackberries and lactose-free cream)
