Recipe
1 chicken cut up into 6 pieces (2lb/1 kilo )
1 tablespoon clarified butter
Water to fully immerse the chicken
1 medium onion, quartered
2 cinnamon sticks
10 whole cardamom pods
6 sprigs parsley
1 tablespoon salt
1 teaspoon pepper
2 cups beef stock
10 pearl onions cut in halves
5 tomatoes peeled quartered
8 pkgs frozen molou’khiya leaves
( defrosted, rinsed well, drained)
1 tablespoon clarified butter
15 cloves garlic sliced (yes you read that right)
*1 Thai chili chopped
1 handful( full cup) fresh cilantro /coriander chopped
Lemon cheeks to serve
Start the process by defrosting the Molou’khiya leaves . Rinse thoroughly and drain well.
Molou’khiya doesn’t take long to cook after it is added to the stock.
10 to 15 minutes.
The chicken will take approximately 45 minutes to fully cook.
Serve with *Maftoul , rice or Arabic bread
