Recipe:

Ingredients:
• 2 red potatoes, grated
• 4 eggs
• 1 spring onion stalk, diced small
• 2 tbspn oyster sauce
• 2 tsp dried fried shallots
• 1 tsp sesame seeds
• 1 chilli (optional, can substitute with sriracha)
• 4tbspn flavourless oil.
Directions:
• Grate the potatoes coarsely to make a hash and wring out in a clean tea towel, or squeeze dry in paper towels to remove as much moisture as possible.
• Generously oil your pan and cover it evenly in the potato hash (about 5mm thick), patting the hash down so it binds together. Lightly season with salt and pepper.
• Fry the hash for about 3-4 minutes on one side, or until brown. Only flip it once it is browned, it should only be flipped once.
• Once the has is on the second side, fry your 2 eggs your preferred way in a generous amount of oil (it should shallow fry them)
• Place the eggs on the hash and drizzle a swirl of oyster sauce over the eggs. Garnish with the spring onion, fresh chilli, fried shallots and sesame seeds and serve.
