NOTE: Robert means to say LIME JUICE and not LEMON JUICE is this episode.
Muddlers used to be a relatively rare bit of hardware behind the bar, then the Mojito popped (back) onto the scene and suddenly they were everywhere. Of course, that doesn’t mean that everybody knew how to use them properly. Some bartenders would use them for “ice muddling” (as we’ve discussed in the past), as well as simply seeing them as a grinding rod to pulverize anything put in front of them.
Muddling is a technique, and like any technique it needs to be applied properly in order to provide the best results. When muddling limes and sugar for a Caipirinha, you can and should be rather forceful in your endeavor since you are trying to express the oils out of the lime shell that are buried beneath the skin. When muddling mint however, as in a Mojito, you want to be gentler with your muddling since the flavors you are after are right on the surface, while deep within the leaves lie the bitter flavors of chlorophyll.
So before you pick up that muddler, think about exactly what it is you are trying to accomplish and what the best methodology is to achieve that results.

Small Screen, love all the Robert Hess vids, but all the recent audio editing to hide Robert's mouth noises and heavy breathing is really not necessary. I may notice it more because I am also an Audio Engineer, but is more distracting with all the volume and out of sync audio adjustments than to just let the video play out. Robert's voice and demeanor is all part of what makes his videos enjoyable. tks

nope, i notice it too.. its a bit irritating. better with the noises than without them. i don't mind. great video though. and the mistake with the lemon isn't really a problem. You could put the recipe correctly in the description

Why wouldn't you use a glass so we can see how much pressure you're doing vs the "proper" shaker?

Totally diff that how I make it. In a regular rail glass: muddle mint, 2-3 cubes sugar (or 1 teaspoon) and 1oz lime juice, swirl glass to coat sides. Shake rum w/ ice and pour into glass. (I didn't even buy a shaker or jigger, I just shake it in a clean small jam jar filled with ice, and do a 2 sec pour per oz of rum. Once you know what an oz feels and looks like when pouring, you don't need a jigger! Guess all those chemistry classes paid off.) Top off with seltzer or club soda. I also prefer to add a oz or two of ginger ale and use less sugar.

I prefer aged dark rum in mojito. Had it once with it in a great cocktail bar and fell in love.

Lauri Koskinen I went to a restaurant where they topped the drink with a small amount of spiced rum. It was delicious.

Guys, the Mojito is a cocktail concocted in La Bodeguita Del Medio, Cuba. If you have ever been there, you should had seen that their one is with white sugar (demerara is the perfect choice) freshly made lime juice, hierba buena (cuban mint) Havana Club 3 anos, that is a amber aged rum (not a white one) and finally (I'll may destroy ur self-esteem xD) ice cubes are used! The versions with cane sugar, lime muddled, white rum are ALL Europeans...

+Peppe Russo Everybody knows La Bodeguita mojitos sucks, they are just trap for tourists. It isnt fresh at all, they have those like preprepared glasses with mint lime and sugar, standing there for hours and when somebody orders it they just finish the drink with a bit muddling, adding rum and ice and soda. And obviously it's heavily overpriced. It was invented in there but nowadays it's shitty one, focused only on milking the tradition. It's the same case like Singapure Sling at Raffles..

Bitounas We believe that the Mojito has always contained lime juice. Here is the recipe from the International Bartenders Association: 4 cl White Cuban Rum 3 cl Fresh lime juice 6 Mint sprigs 2 teaspoons white sugar Soda water

Bitounas Apologies. we see what you are talking about. Robert misspoke in the episode. He certainly meant to say lime juice and that is what it was.

Bitounas No, Mojito should use Limes. Most classic Cuban cocktail books will tell you to use the juice of "limon" in both Daiquiris and Mojitos. Although nowadays we translate "limon" as "lemon", and "lima" as "lime", back then in Spanish-speaking countries there wasn't really a distinction between lemon and lime, they are both called "limon". Limes were commonly grown in Cuba than lemon, so you can rest assured that lime is meant to be used in Mojito.

He made a mistake and said lemon instead of lime.. Just edit it and put that pop up window with lime and it's done. Watching his other videos, he knows what he is talking about.I cant say that about like 95% of those pro bartending school videos on youtube. For all of you "mojito experts," there isnt a single correct way how to make mojito. There is a lot of variations and methods and as long as it's made with fresh and quality ingrediences, it will taste good. It isnt a difficult drink to make and you dont have to be such a nazi about it, it isnt Martini. Peace

Bit disappointed with this video, usually Robert brings some nice insight with the drinks he makes, but just build a mojito instead of shaking it, you can bruise the mint too much by shaking it and you don't want tiny bits of ripped up mint leaves getting stuck on your teeth

Lemon juice? You said this twice, so probably not a mistake. Should be lime juice in a Mojito.

YOU SHOOK CLUB SODA ... wow ... Rob .. This is not the way to make a mojito. You never shake a damn mojito. And you DEFINITELY do not shake club soda, even in small volumes. Totally loses the need. Instead put sugar and lime juice first, leaves on top, and lightly muddle. Sugar will dissolve faster in the lime juice. Then add the rum and soda and just stir from bottom to top with a barspoon.

... he used a dash Club Soda just for the muddled mint and sugar to blend better, the same way a cook will sometimes use a bit of water when stewing onions to get them started... He actually topped it off with soda later, at the end of the video. Also, there is an older video where he also made the Mojito, and he built it in the glass, he obviously wanted to do this video differently and focus on the muddling.
