John Mike Leblond came up with the idea for an offal-and-cocktail based menu while he was still in cooking school. After realizing his true passion for cooking with ingredients many people don't think to eat, Chef Leblond launched a pop-up, Tripes & Caviar, that has now evolved into a brick-and-mortar restaurant in Montreal's Verdun neighborhood. We followed John Mike and his team to St. Henry's, Grumman '78, Ludger, and then finally to Bethlehem xxx where things got wild. And what's the perfect end to this crazy night filled with drinking and eating? A whole suckling pig and curried salmon heads at Tripes & Caviar, of course.

I live here, but it still amazes me every time how some of the population is so perfectly bilingual. Young people of Montreal are probably the only group of people (besides Europeans or immigrants) that can speak two languages with such insane fluency

I am from Ottawa but grew up 15 minutes away from there in Gatineau (which is in Quebec) And I can tell you that it's really a Quebec mentality. It's drastic how quebec people see it as a tool and an ADVANTAGE to be bilingual or even more, in Ontario, even though it's just 10 minutes away, you get frowned at for adressing people in french. it's sad. Most QC towns and cities that are in proximity with english population have a rate of bilinguism well over 70%

Gotta love people who watch this and think everything is hunky dory. He probably works 12+ hours a day and 5 to 6 days a week. 2 people in a kitchen. But it could just be a weekend thing. I love watching these. Its really getting my passion back. Im a chef in australia and love this shit. I love being a chef at the end of the day after all said and done im still loving it. Passion runs hot after watching chefs night out.

I absolutely love Chef's Night Out. There's always comments on every CNO about the hiptser fuckery going on. I can't be the only one who doesn't give a fuck, they make food i dream about both eating and making. Props to Munchies and the Chefs who appear on here. Lots of love.

Headed here a month or so ago with a bunch of buddies for a bachelor party dinner. Awesome place, John Mike and his staff were a great bunch. One of the best culinary experiences to date.

I just realized that chef's night out show- The chefs went out eating at 3 different restaurants with their couple of friends.. ate different foods from 3 diff restaurant?!damn..thats tummy REALLY FULL AHAHA..

one thing i noticed from watching videos on Munchies, is Canadian chefs on here tend to be very lively compared to some of the others from say the states.. interesting.. must be the weed.. LOL

Fun! Uprated. I always liked to cook in the USA and learned in Italy, where I studied. I've been in France for 21 years, and actually landed a job as a chef's assistant in Paris on a short-term contract. Wow, that chef was nasty, but I shut up, obeyed and learned a lot. "Tripéries" are popular here in France and I live in Saint-Denis on the border of Paris and people are poor a lot of them, so the "tripes" vendors in the huge greenmarket here three times a week (one of the largest in Europe) are always thronged. I love "tripes" (offal) and nailed Tripes à la Môde de Caen my second try. He's right, it is more work. If you do it right, the stuff tastes amazing. Ask any Soul Food afficionado! Chitlins here are "andouilles" and "andouillettes," and so on. I have done half a suckling pig in a way I learned from Sardinians in Italy, splitting it with another woman right there in the greenmarket here. Stuffed lamb hearts, I'll try anything! A lot of this stuff has to be cooked all day, cooled, chilled, then continued next day so it can bloom. I miss a North American cocktail and I think this is a winning combination! Never been to Thailand but any Thai dish I had, however inauthentic, was wonderful. You're SUPPOSED to take a long time with this, and then scent the aromas, eat slowly, chew, talk, think ... taste. Uni (sea urchin) is a bit weird but I like seeing it here fresh and alive in January and look forward to doing it Inch'Allah (ha ha!). Italians love it as a seasonal treat, too. I really like the presentation in the dishes shown here, and the thoughtful zaniness. It all seems to ought to work, to me. I'm also one of the few people I know who likes any caviar or fish eggs. But do you want to work in a restaruant for 10 hours+ a day? What if you have a family and maybe have to work 120+ hours a week? It's a really tough job, especially, if you're good at something you will eventually get better, but if you want to go to the next level you have to have raw talent! Not putting you down but telling you things about this tough business. Good luck.

I'm in culinary school right now and my hands are filled with scares XD. Every single person tells you it's god fkg awful of a job... and yeah it kinda is, but damn, when you're passionate about it it's one of the best fkg jobs in the world. I really love working restaurants. The thing that is going to change your life while working in restaurants: if you don't like the people/team you're working with, gtfo. There's a fuckload of other restaurants waiting for you. And that's the best part: you're never out of a job :D.
