Menudo or pancita is a traditional Mexican dish. Healthier alternatives are currently being sought and by substituting meat for mushrooms this objective is achieved. Many times this dish can be greasy and for this reason it is not recommended for people with high cholesterol, on average a plate of menudo provides 180 calories, while a small mushroom provides around 130 calories, the difference may not be much, but with these data you can choose between one and the other.

400 grams of mushrooms
1 chili pepper
5 guajillo chilies
4 puya, arbol or moritas chiles (to add flavor and spice)
1/4 onion
2 cloves of garlic
