Today’s episode in Kyrgyzstan is very special. We are exploring the cultures, traditions and cuisine of the Muslim Chinese communities in Kyrgyzstan. The two ethnic communities are the Uyghurs and the Dungans. Both groups have their own unique history and come from very different places in China, but many Uyghurs and Dungans have resettled throughout Central Asia, bringing their culture with them.
We are starting the day by visiting a local market in Karakol. Here, there is an alleyway that is lined with stalls serving Ashlan fu. Ashlan fu is a cold noodle & starch dish, with tomato, eggs, herbs, chilies, and vinegar drizzled over top. It is a Dungan specialty.
Nearby, we visited the Dungan Mosque. Although this building has many characteristics of a Chinese temple on the outside, it resembled a mosque on the inside. The mosque was originally constructed in 1910 without the use of nails.
We then went to a local Uyghur family’s home for lunch. The family welcomed us with tea and started preparing Uyghur food. The first dish was Suyuk ash, which is a Uyghur handmade noodle soup. The next dish was a hot salad, fried eggs with peppers and ju cai (Chinese chives).
Next up, the family prepared 3 different types of manti - beef, ju cai, and pumpkin. These were all prepared by hand and steamed in baskets. And for dessert, the family kindly prepared Sangza, which is Uyghur fried dough twists.
It was truly a wonderful opportunity to spend time with this Uyghur family, and sharing a meal with them. We would like to give a massive thank you to Farhat and his family for hosting us and making such delicious Uyghur dishes.

As a turkish native speaker, it was re-assuring and wonderful to watch cooking 'Ash' and 'Manti' with the turkic people. I had same dishes in Xian China. The chinese and turkic people are so welcoming, loving and caring. Thank you.

@@m.nasrodinov aş is Turkic word that we can see on Orkhon inscriptions (735). At 735 persians and turks were not communicating. Orkhon inscriptions are the firs credit that the word of aş is being used. Also on Uygur Yenisey inscriptions we see the word of aşçı which is chef or cooker. Etymologists couldn't find any credit that turks took the aş word from persians that they don't have any fing idea who they are at those times. You are the racist and tribalist here that you were sooo uncomfortable with the calling aş as turkic you needed to ''fix'' it as pErSiAn.

That food looked friggin' amazing. Would love to do this tour some time myself! When I used to live in KL, I used to go to this place that made handmade noodles from the Muslim Chinese area, and they were incredible.

We are from Malaysia. Of late there has been Uyghur refugees in Malaysia opening up their fantastically display of cuisine through restaurants. I hope the Chinese government get their just rewards for treating the Uyghurs with 0 humanity.

My Japanese mother has made 10,000's of gyoza, over the years. That woman can make a factory perfectly pleated dumpling in 2 seconds flat! OMFG! They are so delicious as well. (One of my most favorite things in the world.) 😍

Thanks guys for another great video on Kyrgyzstan and its street food and markets, fresh. Impressive detail. Did you know the meaning of the suffix -stan shared by seven countries in the heart of Central Asia? It means, 'the place of' or 'the land of'. Eg Kyrgyzstan, 'the land of the Kyrgyz.👍

This Old Persian word -stan has a similar sounding and similar meaning cognate in the English language as well called -ton. This is a common suffix from Old English, meaning ‘enclosure’ or ‘estate’ a meaning similar to 'land' or 'place'. Eg. Brighton, Everton, Darlington.

@@MY-yy2ff Chinese stir fry is raw? Uyghur cuisine is a mix of chinese, indian, Arabic and a bit of turkic and mongolic. Like turks claim lahmacun is „turkish“ while the word is semetic and the origin mesopotamian

Bu arada uygurlar ırk olarak Çinli değildir kardeşim. Çinde yaşayan bir Müslüman Türk halkıdır. Bunun ispatı ise gördüğün yemeklerdir, yemeklerin tamamı Çin yemek kültürüne ait değil Türk yemek kültürüne aittir ve bu yemekleri Çin seddinden, Bosna herseğe, tataristandan kuzey hindistana kadar olan bölgede bulabilirsin afiyet olsun.

All the food shown in this video are still very popular in Central and Western China. 1:30 cold noodle and cold green bean noodle. (凉面+凉粉) 10:20 soup noodle(汤面), 10:53 fried tomato and Chinese chives(韭菜炒蛋). 14:33 steamed baozi (包子) 15:48 sanzi (馓子) 20:11 milk tea(奶茶)

@@peonyeast9095 Trust me. It’s nearly the same. Have you ever been to Shaanxi and Henan? If so, did you just try the food that you are familiar with when you were there? The restaurant in China will not sell this kind of food because all the food shown here, except Sanzi, are too simple that we only prepare them in home. Restaurant usually sells food which average family didn’t know how to prepare.

The Uighur are an ethnically Turkic group of Muslims in the formerly independent Republic of East Turkistan, which the Chinese call Xinjiang Uighur Autonomous Region,There are also 500,000 Uighurs in Western Turkestan, known as Uzbekistan, Kazakistan, Kirgizistan, Turkmenistan and Tajikistan

Uyghur culture only has some turkic influence, before which they were Buddhist, but ethnically they have nothing to do with turk. Even Turkish are actually Greek.

Luke for your information: Uyghur's are Turkisch and muslim peoples. They are not chinese people. Uyghur cuisine is affected by mostly Turkish, muslim cuisines and less chinese cuisine.

Hey, Luke Martin. I was so exited when I was watching your Uyghur cuisine video. I am an Uyghur American. I guess you may know there are few great Uyghur cuisines in both east and west coasts. I live in Boston,, MA. The closest and best one to me is the Marco & Polo Express Uyghur cuisine, which is located in 254 Bull Hill Ln, Orange, CT. You would be more than welcome to visit that place if you are interested in, they provide really great Uyghur foods, and you can feel more about the Uyghur culture there.

Kyrgyzistan is a Turkish country by the way ..There might be a lot of Chinese influence in their cuisine but but they are Turk by nature!

It was great content! Absolutely loved it, btw Uyghurs in Kazakhstan and East Turkestan do consume the same food as the ones you've shown in the video. Also, the herb "Jiusai" used for Egg fry and Manty is called Chinese chives in the US and can be found in local Asian markets or at Hmart.

It's Uyghurstan not East Turkestan. East Turkestan is just a name given by Soviet while Xinjang is a name given by China.

I love your video about the two different types of Muslim Chinese Food, your shirt that says Taiwan, your casual comments about how you can't visit Uyghurs in China (as you know if you've watched the news), and your casual comments about how the Uyghur food tastes like food from Taiwan! Great video, I totally got the point of it, and I am sure other people did, too.

Well, ignoring what you may be implying politically, the food from Taiwan are basically just Chinese food, so they’re saying Uyghur dishes are just Chinese too? That I find kinda surprising tbh, though some of the dishes do look similar.
