Older well used sheet pans make for better even roasts, something to do with how the metal has cured. Watched a video about it the other week, very interesting. I have definitely stopped being so OCD about getting my sheet pans sparkly clean after cooking. They make not look as lovely, but taste and crispness matters don't you reckon !

You should buy a reusable silicone one, also super easy clean up only have to wash the mat with the pan & spatula:-) I never realized how much foil I was wasting until I bought a couple lol!

Just made the BBQ one! Soy curls are always a hit even with the non-vegans in my house. Every new soy curl recipe that you release becomes their new favorite!
I make the red cabbage dish all the time now, one of my favorites, such a genius idea! Easy to vary, too, with tofu, shop bought seitan stripes, different spices etc.. So quick to make and always delicious. Today I brought it to work with a quick dip I made from mayo, tomato paste, rice vinegar and maple sirup.
I love the way you always figure out how to make delicious and hardy recipes that don't take that long to make! Can't wait to try these! Also, as a request, I would love to see your take on a vegan caesar salad? Sorry if this sounds basic lol.

My favorite is getting a vegan savas age and cooking that with cauliflower, onion, and yellow/green squash. I just use a dash of vegetable oil, salt, pepper, oregano, and thyme!!! I seriously crave this dish on a regular basis. The onions and the squash get slightly caramélisés and it’s just sooooo good

I made a riff on the bbq one last night and it was so good! I didn't have cabbage so I subbed out broccoli. Definitely want to try it with cabbage cuz I love roasted cabbage! And that nicoise salad looks epic - I'm obsessed with sheet pan meals, and definitely want to do as many of them before it gets to hot for the oven.
