Mutabal is one of the most famous and most delicious Middle Eastern dips. The most widespread version is Mutabal Batinjan (Eggplant Mutabal), a savory eggplant spread made with roasted eggplant, yogurt, tahini and a few condiments. It's creamy, smoky and very yummy.
Traditionally, the eggplants are roasted on an open fire (outdoors) or on a gas stove (increases the smoky flavor). In this video, I'm going to show you how to roast them in the oven, as that's what most people have at home.
