Let’s make the most fragrant instant pot yakhni pulao which is extremely easy and a quick recipe to make. Though it can also be made on a stovetop but using Instant Pot makes it all the more easy & fast. In my home, this mutton yakhni pulao is a family favourite. Serve it with some raita, salad and kabab and you are in for one of the best meals you can have.
In this video, I share a lot of make-ahead tips and tricks as well as how I make my Yakhni using an Instant Pot, which by the way, is equivalent to a bone broth that has been cooked for 24hours on the stove. Plus how I store it & use it for different things.
NOTE: In case you don't want to make the broth separately you can make a pouch of all the spices in a muslin cloth and add that pouch when you put your meat to pressure cook for 6-8mins. You can also just saute all the spices with the meat If you don't mind whole spices in the rice & picking them before eating.
Ingredients:
1 kg Mutton with Bone
3.5cup rice (soaked for 30mins & strained)
1/2 tsp Cumin Seeds
1 medium onion sliced
Julian Ginger 1” pc
1-2 tbsp Yogurt
3.4tsp Salt or as required
Yakhni Spices:
3tbsp Coriander Seeds
1.5 tbsp Cumin Seeds
1 in Cinnamon Stick
1/2 tbsp Black Pepper Corns
3-4 Black Cardamom (Bari Elachi )
5-6 Green Cardamom (Choti Elachi)
8-10 Cloves (long)
2 Star Anise
Ginger
1 medium Onion
Half a garlic
