at a certain point when learning/feeling music you kind of get a good direction of where a song can go after the first couple measures especially rap. it’s the subtle changes in a song that really gets the listener craving for more.

You picked up on it straight away, but a big reason people complain about the mix of this album is because Kanye WANTED it to sound like a 90's hip hop album
Mike Dean was most likely the guy playing the ”comb-paper” guitar on the second track! (He is credited on the album and song and is known for his synth and guitar lines)
I always think in my head that there is no way this dude can actually listen to the music while going crazy like that and then he notices things I havent noticed for almost 5 years of intense listening

I love how you stopped a little bit at gorgeous to appreciate kanyes lyricism considering that's arguably his greatest track lyrically and the fact that, someone like you thats reacting to the album mostly for the production did that I think really proves how fantastic Kanyes verses on that track were, anyway cant wait for part 3, you're awesome!
I love the fact that he started picking on some one-liners, I wish he would do that more. I loved his reaction to the blackballed/black balls punchline. It's good content anyway keep it comin'

That's Jon Anderson of Yes singing the 'can we get much higher' sample (from a Mike Oldfield song, no less) at the beginning. Next song (Gorgeous) samples Enoch Light & the Glittering Guitars cover of a Turtles song. After that, POWER samples King Crimson. The whole album is prog inspired. Not gonna spoil some of the other samples of other songs (even though you probably have listened to the whole record all the way through at this point and are editing all the parts), but you're in for a treat.
