I just love how you all just embrace the fact that your home is over 100 years old. Most people wouldn't be caught dead storing their carrots In bins filled with wet dirt! The wonderful mother earth not only give us a luscious bounty of food, and a place to keep them cool. Well done Elliott family!

Lol I was thinking the very same thing seeing box of dirt going in.... brand new home here...housekeeping... I am constantly fighting my kids over dirty socks. But now we got a cow, goats and garden in full swing. I better decide we hich way to go before I explode. 😁🤨🤨🤨

Actually, it depends on where you live. Living close to nature is pretty normal in rural Europe and even in some cities, too. Many of us learned this way of life from our grandparents

Yes, in Russia a cool room under the house was something traditional, before people started moving into cities. Then, when that became a thing, the Soviet Union created communal cooling spaced for each building, where people would store fermented foods, potatoes and tubers, etc. Even today, most people have a cool room in such communal spaces (some as their private property, some under rent). It is quite practical. Though in the XXI century, many young people believe it to be obsolete, but personally, I have recently invested in one for my small family (since the one we shared with my Grand-mother just didn't suit us, being overly humid), and I think that as the idea of eco-living and growing what you eat becomes popular again, it will become more and more popular with people of my generation.

Here in Italy, we store our food in the stone cantinas with vaulted stone ceilings. Been doing it that way for centuries. Stone moderates the temperature all year (not too warm in summer, not too cold in winter) and they are on and sometimes under or built into the earth.But there has to be some air flow, usually with a small window or two to prevent mold in the wet seasons.

I love the idea of the stone cantinas. The ground is too unstable here in So. Calif to do anything more than earthship adobe and dugouts four feet deep.

I have wonderful memories of my Italian grandparents. They both came over from Italy in their mid-teens to live the American Dream and that they did. They spoke mainly Italian with family, so I learned a second language by the time I was 4. Gramma was a housewife raising 10 kids, while Grampa built up a very successful painting company that is now run by his grandchildren and great-grandchildren after my uncle retired. We had parties and family gatherings almost weekly at their home as weather permitted. Grampa built up his grape arbor to be 15'x25' with bunches of grapes hanging down and tables and chairs set up all season long. There was an old double sink for washing what he grew in his garden with grapefruit-size white sweet peaches, almonds, and plump figs, and the apple tree that grew 3 varieties of apple on it from grampa's magic grafting abilities. In the fall we all would gather in the summer kitchen set up in the basement during the grape harvest time. He also had a cold storage room with balls of cheese and dried sausages hanging in there with canned goodies gramma made, and of course 3-50-gallon wood barrels full of wine he made. During the harvest time which was over two weekend-long pressings that everyone participated in, even the kids. We ate, we dance the tarantella, and we would go home exhausted from the eating, the laughter, and the pressing. I wanted a cold room too, but this house has a half-finished cinder block room with a furnace and washer and dryer in it. To warm to store anything in. Love yours! (grampa's garden had a pit at the back that all of the grass clipping, kitchen scraps, and garden scraps went into in layers, then another layer of soil and on and on. Then next spring he dug the pit again, using the compost made from the previous season).

If you didnt know, you can use the carrot heads in pesto to bulk it out and add more nutrients. Just love all you videos so much. Thankyou x

I live in the UK and find you and your lovely family enchanting. I also have a country kitchen with the fridge and freezer reallocated to another space. I would love a root cellar like yours for my preserves but alas my home is built on rock. Love and best wishes to you all and thank you for sharing your lives with us.

I would love to have a nice walk in cooler in my basement. Right now we have a smallish cold room and a cool room for dry storage. Keeping root veg in dirt is one of the easiest ways that I learned as a child to keep the harvest longer. Love how you make it a family event as it should be.

For everyone asking, she made a video once about the walk in cooler. They insulated the space really well. Then added an AC unit and bought something that hacks the AC unit to bring the temp down a lot colder. Or maybe that was Parisienne Farmgirl who did the video...

Yes both Justin Rhoads and Lumnah Acres have cool rooms, it’s like having a walk in fridge like in a restaurant.... awesome way to store and preserve food... it wouldn’t last that long in a regular fridge for sure...

What at good feeling to have, starting bringing in some of the harvest . I couldn't help but laugh. Elderflower gin cordial , it reminds me of the sisters on the Waltans. They always had a cordial. it was good for everything. Papa's recipe. I really enjoy your video's. thanks Joyce

Found the answer... Ac unit with a coolbot (look it up). Coolbit makes ac unit keep running. She keeps it 34 degrees in there.

Nifty😘. At first I thought you were going to put pavers on the floor. Everything looks nice. I never knew that’s how you store carrots. Maybe sometime you can tell us how it’s done and why. I will never do this because of my health but it’s nice to watch and learn.

Carrots and other root vegetables are often stored in damp soil or in damp sawdust to mimic being in the ground. It keeps them from drying out and shriveling up in storage and makes them last longer without rotting.

How long can you store them like that and don't they start growing again? 🤷‍♀️ Do you wet the soil during the storage period? 🤷‍♀️

Christien Botha They will keep around 4 to 6 months stored like this. They won’t keep growing, because they won’t have the tops on them and they won’t be getting any sunlight. You might need to wet the soil occasionally, but you want to keep it damp, not wet. If it’s too wet, they will rot. You also want to check them off and on while they are in storage and remove any that are rotting or damaged, and keep the carrots separated from each other (not touching). You can also leave them in the ground all winter if you happen to live where it doesn’t freeze.

I'm STOKED on my basement cold-room build out. Built it last winter but didn't get the ventillation/air-flow to the outside cold worked out and installed until this week (mid 90's currently, night-time 80-ish - not really optimal at the moment). Can't wait for Oct for the cold nights to fire it up and get 'er goin'. I've split mine into two - cool storage and cold storage. Two different zones sealed off with two separate vent settings. I plan on keeping one in the 30's (as much as possible depending on outside temps) and one in the mid 50's [F]. Winter operations will simply be venting to outside cold air. Next summer we add the CoolBot for full, year-round walk-in cold room.

I just finished my three year long project of a root cellar at our subdivision "homestead," and then we moved! In our "Michigan" basement (dirt floor), there is a crawlspace to a back room. I'd like to convert this into a new root cellar by putting insulation in the crawlspace, and constructing an egress from the outside for access.

Lovely old fashioned cool room! We built a new farm cottage in 2016 and the back half of the cellar is into the hillside. It stays cool. Perhaps one day we will section the far corner to be even cooler. Just started having mouse issues. The cats proudly brought us two and we have set lots of traps. So the items on the cellar shelves are glass or canned goods. I use the gallon glass jars with 4" metal lids, but they can be heavy if filled with rice. I just started to fill Ball 1/2 gallon wide mouth jars. I can vacuum dry seal them with the Food Saver attachment. Much easier to handle this size. Is there a way of dry vacuum sealing the 4" lids?

I wonder if someone handy with wood could come up with a round jig. It would need a hole top center. Some form of silicon gasket to cover the lid. I have been giving this a lot of thought. I use a hand brake bleeder & food sealer lids. You can not buy just the gasket. You have to buy the whole shebang. Right now people are price gouging since they are hard to get. I am puzzling on how to build a replacement gasket. I have some round silicon jerky trays coming. I might see what I can come up with that.

Our growing season is a bit behind this year (or, glass half full, maybe they've been way ahead in the few previous years)...so we're just beginning to see our gardens burst forth, but this video makes me anxious to begin harvesting in earnest! Love your cellar and cooler room!

Turned out fantastic. Inspiring. I have always wondered about the victorian trick of storing the carrots in soil in a root cellar. I tried it once with sand but it didn't work. Is it the compost, sand or garden soil you use to layer the carrots in?

Do you save the apricot kernels to make Noyeaux extract? It's like almond extract but SO much better and can be used in baking :)

I’m sure this is a silly question, but why do you clean the carrots, only to store them in dirt again? I have decided my next home will reunite a root cellar/cold storage! This is super neat too see.

If you thin those apricots out when they are tiny, you'll get just as many pounds of them, but each one will be bigger. Makes less work to pick AND preserve when the time comes. Same for any other tree fruit.

You can make a really yummy pesto using the carrot tops in place of basil. But that cow looked very excited

Thank you ...great video. Question... can I use sand instead of dirt to store the carrots. I just was reading how healthy and great to make pesto using carrot greens and sunflower seeds. With all the uncertainty in our World and our Corn Crop destroyed with our solos everyone I know is learning food production and storage. Thank you so much for all your hard work.

I never seen anyone decorating a food seller. Great idea with the lavender!! How long do these carottes last in the cold room? Why do you wash the carrots before putting them in the container with soil?

Have you thought about putting your dry goods in canning jars and vacuum sealing or just in the jars; that will keep mice out!
