My DELICIOUS & MOIST Vegan Birthday Cake Recipe - BEGINNER vegan cake without eggs

Today I'm sharing my super lazy vegan birthday cake recipe. This easy Brazilian carrot cake recipe is vegan and perfect for beginners making an eggless and dairy free cake.
//LAZY VEGAN BIRTHDAY CAKE RECIPE:
3 cups all purpose flour
2 cups sugar
2 tsp baking soda
1 tsp salt
2 large carrots
1/2 cup canola oil
1 1/2 cups almond milk

my bday is march 15 and my gf and i have an sort of tradition where we bake each other a cake (sometimes together) and sometimes we ask each other for a surprise, sometimes we ask for a specific cake. i asked for a crumb cake (lmao) but we need an easy cake for my get together! so this is perfect!!!!

I made this cake tonight and it is so moist and so tender and so light. Not the usual dense, heavy carrot cake. I made the coconut creme ganache as well. What a perfect recipe! I did mine in two 8" round pans and it is heaven.

Yep, that was a clip the camera didn’t record but yes, spread ganache in between the layers :)

Hello! How much time it needs into the oven please? How I'll know if it is ready? Also, after putting the banache, how much time it needs into the frigde?

350F for about 20-30 min. Check in after 20 and do the toothpick test (insert it in the middle of the cake and if it comes out clean, it's ready, if it has batter clinging to it, it needs more time). You'll need at least a half hour in the fridge after putting the ganache so it sets. Enjoy!

Any idea how much of each ingredient to add using grams? I find that having specific weight measurements helps with consistency. Also, would you mind writing the recipe for the ganache in the description as well? Thank you!
