Omg, forgot to mention...we need more wild garlic recipes lol...it tastes so good! Maybe a wild garlic pesto with gnocchis or maybe even use the wild garlic pulp in the gnocchi dough.. or some other dish using wild garlic... Anyway, thanks for this wonderful artichoke recipe Jules.

Where do you get that spice grinder/blender from? I have one but it doesn't come with a tight fitting lid to make fluid gels and oils like yours.

Amazing video yet again. I was wondering why you usually cook in large quantatities and what you do with leftovers since there is very little in the final dish usually because it's fine dining.

Most of the things I create I do from a chefs point of view, I also started making these videos to inspire other young chefs. I’m still finding a way to adjust this in a good way, but I’ll get there. Some things are also not possible in small quantities, for example it’s impossible to make a gel recipe that’s less then 150 grams. That’s just not going to become smooth. I always keep my leftovers and use them for our own dinners or for dinners with friends & family. Nothing is thrown out

@@JulesCookingGlobal That makes more sense now! For a beginner like me I really want to try these dishes but am always a bit skeptical about the leftovers since I usually cook for 2 or 4 at max haha. Would also love to see a "basics" series where you maybe showcase different techniques like making gels, foams, purees, oils and how to combine flavours to create something of our own

What's your spice grinder/mini-blender? If I try to make a nut paste on mine, it will cause a nuclear explosion. Yours seems extremely powerful.

Interesting how you prepare the artichoke...you directly boil the whole thing...instead of first taking out the leaves, triming it...then putting the artichoke in water + lemon to avoid oxydation...then cooking it ... Your way avoids worrying about oxydation and the heart of the artichoke is easier to clean afterwards..
