Peach Preserves
4 cups peaches (pitted, sliced, peeled)
6 Tbsp Ball Classic Pectin
2 Tbsp lemon juice
7 cups sugar
Combine sliced peaches, pectin and lemon juice in a large sauce pan. Bring mixture to a boil, add sugar, stir until dissolved, bring mixture back to a rolling boil that cannot be stirred down. Boil for 1 minute. Ladle hot preserves into hot jars. Water bath half pints for 10 minutes.

I always mash the fruit before I measure that way you get more accurate amounts of sugar and pectin. I've found if I mash after I measure fruit the jelly/jam is too thick and at times rubbery When making jam/jelly you should use a flat spoon for stirring it prevents scorching. Stirring with the ladle only stirs the top

The USDA canning book says to put up to 1 tablespoon of butter in your jams and jelly to prevent foam forming.

I find that butter cuts down on it a little but there is still some to be scrapped off

Do you water bath them or keep them turned upside down? I saw you turn stuff in the other video, why do you do that? I'm just curious, that's all.

It’s an old timey method that is no longer recommended. It keeps the lids hot and helps with air bubbles. It was the way I was taught to can, I feel like my food keeps better doing it, but that may just be in my mind 😂

Those peaches look beautiful & so does your preserves…my mama & granny always made peach preserves & pear preserves, usually other fruits were either jam or jelly…living in Florida now, I haven’t canned anything but usually put up strawberry freezer jam…have a good day on the farm❤

Peaches are always fun...I did peaches like 3 weeks ago and didn't peaches were still in season. I pick @ Miss Angeles orchard here in Mt Airy...do you ever make peach salsa? I saved all my peach skins to make peach jelly too. While I gotcha, I saw in a previous video that you had elderberry bushes, will you have a video on that? I was blessed to gather 2 gallons of berries(already frozen and gleaned) and made 15 1/2 pint jars of jelly yesterday.. I love this time of the year..

I’ve got them in the fridge right now, trying to decide what to do with them 🤔🤔🤔 I usually don’t get many but this year my wild bush did great and I beat the birds for the most part!

peach jam was the first thing i (def not an expert) ever canned, wasnt bad. I got a video content idea... can you make a video explaining the upside down jar method? how, what, and why it works.

Actually, inverting filled jars like that is not a safe canning practice. It should be waterbath canned or steam canned for at least 10 minutes (the time is dependent on your altitude)

You are correct it is not recommended, which I have said in a video or 2, so as I say not as I do 😂😂

I made some strawberry jam a couple weeks ago, and it turned out thin for some reason. I followed the recipe on the pectin box exactly, and I'm guessing maybe the berries were juicier than I thought. It's still good, and can be used as syrup if necessary 😉. Your canning looks beautiful

Did you check expiration date on pectin? This happened to me but I was making cherry jam, and the pectin I had purchased not even 2 weeks before was expired, I was so mad. But it was very good syrup for pancakes, ice cream.

Honestly sometimes it just happens to the best of us, no rhyme or reason. My mother in law taught me how to make jams, hers has not set the past 2 years and we aren’t sure why

We have the Peach truck coming to our Rual King this weekend. I have 2 questions though, why do you turn the jars upside down? Is that to get the air bubbles settled out? And these aren’t getting processed( water bath orPC)? If not, do you put them in the refrigerator or they can go to shelf with other canned foods? Sorry I’m just curious, did I miss you say how long they process in the canner? Sorry for all the questions, but I’ve never canned peaches, and I’m getting a good bit of them this weekend. What was that you added to the peaches? Thank you God Bless

I turn the jars upside down just an old timey method (not recommended) for air bubbles and to keep lid hot, these are water bathed for 10minutes. I added ball fruit pectin, but my favorite thing to use is suregel! When you get your peaches get a pack of suregel and follow their directions, it will tell you exactly how to do it!
