When I stayed in china ,nasanay na akong kumain ng roasted goose kasi in every resto yun and kanilang meal na swak sa budget 10 rmb to 15 rmb which is 80 php to 120 php that time with rice ,soup and veg . Now I am in PH I am longing na makakain ulit ng roasted goose.Thank you chef for showing this resto ,will try to visit soon .

I used to want to be a chef then eventually open my own restaurant. Sometime around my late teens/early twenties I was discouraged to pursue that dream. Maybe I also didn't want to pursue it anymore because I did something else and eventually took a different career path. 10 years later and I am now on track to be an attorney (hopefully in 12 months time). But every time I watch your videos, it makes me feel like I've taken the wrong career path because I keep getting this thought that I still want to open my own restaurant.

My dad use to buy several roast geese from Hongkong and bring them back to Manila each time he travels there. My grandma takes out the excess fat and freeze them to use when cooking bokchoi and freeze the roasted geese to eat later. Sarap. One time he bought as many as 10.

Thank you Chef for sharing this, This should be an eye opener to our local formers of what's possible with our own poultry/fowl instead of importing we could possibly raise our own ducks and goose for this purpose. Imagine, 5k for one order. I've rarely seen any duck or goose dishes for a very long time except for the occasional fried Itik from Cainta or Taytay. I'm not sure if we have a variety of dishes in the Philippines that utilizes duck, in the north it's mostly, Kaldereta sa gata, or adobo sa gata. On a side note, Chef JP, May i suggest that you take your time to take to visit Marikina river park on a Saturday or Sunday morning. Bring your dog, take a stroll and have breakfast along the river park, I'm sure you'll find the locals to be more than willing to recommend where you which place serves the best breakfast. While you're at it, The Marikina Public Market is just a stone's throw away from the park.

Hi chef it is called “gansa” in filipino po. Hehe My father used to have 30+ heads of geese here in the province of isabela(northern part of the country). The meat is very juicy and tender but the skin varies depending on the dish. Adobo and caldereta is the most common dish that we used to cook and compared to ducks it has a substantial amount of meat which is perfect for special occasions. God bless chef!
