My great great Grandma’s Texas Tamale Family Recipe For The Best Red Chili Pork Tamales On YouTube.

Ingredients List
Red Chili Sauce:
1-12oz bag of dried Guajillo Chilies Stemed and seeded.
2 tbsp kosher salt
1 tbsp garlic powder
1 tbsp onion powder
3 cups of water to blend with chilies in blender.
Cut off stem with scissors, cut up side of the chile as seen in video and remove seeds from chilies.
Fill a 10 to 13 quart pot 3/4 the way full with water. Bring water to a boil, add seeded chilies to boiling water, stir chilies for 2 minutes in boiling water then turn flame to low, cover pot and set timer for 20 minutes.
Slow Roasted Pork:
12 pound bone in Pork Butt.
3 brown or white onions cut in quarters leaving the root stem attached.
4, 12oz Negra Modelos.
Sazononador seasoning.
8 heads of fresh garlic sectioned and left in husks.
1/2 to an wholesome 3.5oz bottle of your favorite brand of liquid smoke.
The Tamale Masa:
12 to 15 lbs of fresh Masa for Tortillas
4 cups of pork broth yielded from roasted pork.
You will mix in 1 cup of the pork broth to every three pounds of masa.
Additional Ingredients you will need for the preparation of all the above:
6, 1 pound boxes of Farmer John Manteca (or any brand of pork lard) just make sure it’s PORK lard.
4, 16oz packs of dried corn husks (Hojas Para Tamales)
2, 40 quart tamale pots
Tin foil
Kosher Salt
8 tbls New Mexico Red Chili powder
Masa spreader or spreaders depending on the number of helpers you have. Spreading the masa can be done with a spoon or plastic spatula if you don’t want to buy the spreaders.

Hello Steve. I have watched a ton of Tamale videos over the past many years and yours (this one) started popping up recently. I finally succumbed to the algorithm and decided to watch it. Holy Moly! Your great, great GM is a GENIUS! Thank you so much for sharing this recipe and method. Love the details you shared. Just subscribed to your channel. Could 8 make the masa for the flour tortillas instead of buying it?

Hello! I’m not sure as I’ve never diverted from my family’s original recipe. I’d imagine you could buy the masa known as Maseca and follow the directions on the packaging to make your own tortilla masa and the apply my directions for further preparing it into masa for tamales. It sounds logical and very possible I just can’t guarantee the outcome unfortunately because I’ve never done it that way. Great question though as not everyone has store bought premade masa for tortillas available at their local markets. Thank you for watching and asking a great question. Maybe I’ll experiment myself. My mom and grandmother made tamales but a different way. Im just now starting to make them to carry on the tradition and love watching new ways to make them and yours by far look the best!

Mr. G., regarding the Sazonador Supremas seasoning, the one you showed in the video is a 14 oz. container. I have scrubbed Amazon, did regular Google searches, and I have struck out. I have not tried my local Carniceria yet, but I'll be doing that soon. Is Goya or Badia "Zazon" the same thing? Badia has the "Complete" which I suspect might be closer to what you are using. Please help! Thanks man!!

@@The_Original_Big_Daddy Hi. Sorry to hear about your difficulties locating the Sazonador. I have no problem finding it at Vallarta markets out here in Pasadena California. I’m not sure where you’re located but most Carnicerias carry it too. I googled it and it looks like only certain markets carry it. El Super carries it and I keep seeing it on Intacart. I trust Goya products too. If it say “seasoning for beef chicken and pork” on the label I trust it will work just fine. Good luck. Your tamales will still taste amazing even if you substitute a different all around seasoning for Sazonador. Take care. Steve

Since Lard is rendered down fat and your broth had its fat removed, why couldn't you use it? Your tamales looked good when finished. Others use baking powder with their masa. Would it improve them? I saw another recipe that would use a screen filter to remove the pepper skins after blending. They didn't cook the peppers. Does your technique of simmering them 20 minutes soften the skins enough not to need filtering?

@@gregyohngy Hi Greg. I will answer your questions in order of the being asked. 1. My great grandma’s recipe from 100 years ago boiled the pork in water. They used the water from the boiled pork for the masa. Slow roasting the pork renders much more fat, too much fat to add to the masa in addition to the amount of lard her recipe calls for. Too much lard will compromise the integrity of the masa and it will not set up correctly. 2. Again our 100 year old family recipe never used baking powder. I guess it couldn’t hurt to try adding it to satisfy your curiosity. You’d have to make the original recipe to know if they could be improved by adding baking powder. Everyone loves our tamales just as they are. Filtering the skins imho is an absolute must. The skins are bitter even when boiled soft. I guess if the red chilies are not dried they may not need to be boiled. Find a recipe that looks the most delicious and make a commitment to make that recipe. Not sure why you need the answers to these questions. Do you have your own tamale recipe or are you searching for one?

If I use chicken or beef instead of pork, are the ingredients the same?

Unfortunately I’ve never made this recipe with chicken or beef so I cannot give you an accurate answer. I suppose you could substitute the pork with chicken or beef but you’d have to figure out your own cooking time and temps for those meats. Chicken is normally used in tamales that use green chili not red chili. Red chili is almost always used with Beef. This recipe would be best suited for a beef substitute.

I haven't had a great-tasting tamale since I was in grade school. My daughter and I are definitely going to make this tamale method and recipe. We are planning to make them for the Christmas holidays. The instructions are the best I have seen. Thank you very much for making this video.

I tried your recipe and what I loved the best was roasting my pork shoulder. The only problem I had I didn’t have liquid. I’m sure I missed something! Tamales was great and now selling them. You are awesome! Thank you
